State of the market: After Atkins and beyond

The topic
The weight management market is estimated by some to be worth $5bn. This presentation will chart the
rise of the weight management sector, with special focus on dietary programs to achieve weight
management, from Atkins to GI and Weight Watchers. Such programs have attracted big consumer
followings, and some manufacturers are getting on board by producing ranges of reduced fat and
reduced sugar foods. This session will look at understanding the success and failures of current
programs and how to predict the next big thing.

Caroline SCOTT‐THOMAS Caroline Scott‐Thomas is a journalist specializing in the food
Reporter and beverage industry. Writing for FoodNavigator‐USA.com,
Food Navigator USA her particular focus is the North American market, where soft
drink consumption’s role in the obesity problem has been a
hot topic for debate. Prior to completing a Masters degree in
journalism from Edinburgh Napier University, she had spent
five years working as a chef. She works from Decision News
Media’s Montpellier office in the south of France.

Dr. Stephen DANIELLS Stephen Daniells is the food team's science editor. He has a
Science Editor PhD in chemistry from the Queen's University of Belfast and
Nutra Ingredients USA held post‐doctoral research positions at the Technical
University of Delft (Netherlands) and the University of
Montpellier (France). He has been writing about nutrition
science and food science for almost five years. Stephen lives in
a French village where he is struggling to renovate an old
house that was built before the invention of the right angle.
Speaker
Pr. Martin R. YEOMANS Martin Yeomans is Professor of Experimental Psychology at
Professor of Experimental University of Sussex. His research explores the influence of
Psychology hedonic and sensory evaluations of food on appetite,
University of Sussex integrating physiological controls with psychological and
cognitive influences. Recent work focussed on acquisition of
food likes and how such liking may over‐ride satiety and so
promote overeating. Current research looks to integrate the
role of expectations about both the sensory experience and
satiety value of foods into models of appetite control. He has
published over 80 refereed articles and contributions to
specialist books, and has made numerous conference
presentations.

The topic
The gut microflora of obese people is different from their lean counterparts. So could probiotics and
prebiotics be used to modify gut microbial populations and help shrink waist sizes? This session will
look at where the science stands, and where it is going, in this exciting area of nutrition research.

Dr. Chieh Jason CHOU Jason Chou, Ph.D., was a post‐doctoral research fellow at the
Researcher Obesity Research Center between 1997 and 1999. His
Nestlé background training includes biochemical nutrition and cell
biology, and his research focused on physiological and
biochemical functions of uncoupling proteins in obesity.
Pr. Patrice D. CANI Professor Patrice D. Cani is Researcher from the Fund for
Research associate FNRS Scientific Research (FRS‐FNRS) in the Metabolism and
UCL, Louvain Drug Nutrition research group at the Universite Catholique de
Research Institute Louvain (UCL), Belgium. Prof. Cani's primary field of interest is
the role of gut microbiota in the development of metabolic
disorders, such as obesity, type 2 diabetes and low grade
inflammation. Covering the fundamental mechanistic aspects
of the host‐gut microbes interactions, as well as the impact of
nutritional modulation of the gut microbiota. He is author and

co‐author of more than 70 scientific research papers published
in peer‐reviewed international journals, conferences and book
chapters. Prof Cani has been appointed Visiting Professor (in
2010) at the Imperial College London, UK. Member of several
international associations, he is also a founding member of the
Belgian Nutrition Society (BNS) launched in 2008.

Jess HALLIDAY Jess Halliday is senior editor of FoodNavigator.com. Over the
Reporter past twelve years she has worked in print, broadcast and
Food Navigator USA online media in both Europe and the United States, and has
specialized in the food industry since 2005. She is currently
completing an MSc in Food Policy at City University London.
Jess lives in a small village famous for figs near Montpellier,
France.

Dr. Lisa R. YOUNG Lisa R. Young, PhD, RD is a nationally recognized nutritionist
Adjunct Professor of and an adjunct professor of nutrition at New York University
Nutrition (NYU). She is an expert on portion control and author of The
New‐York University Portion Teller Plan published by Broadway, a division of
Random House. Dr. Young is regularly featured in national
publications including the New York Times, the Wall Street
Journal, USA Today, Allure, and Fitness. She has appeared on
national television including CNN, FOX, ABC News, NBC News,
and TODAY, and was featured in the film Super Size Me. A
nutritionist in private practice, Dr. Young has been counseling
adults and children for over 20 years. Dr. Young offers
counseling on a wide variety of nutrition‐related conditions.
She has also conducted obesity research at the University of
Pennsylvania School of Medicine and at St. Luke's‐Roosevelt
Hospital Center; and has consulted for various weight

management programs in New York. Dr. Young lectures
throughout the country and has presented her portion‐size
research at some of the country's top professional
organizations. The author of numerous academic publications,
Dr. Young has published her research findings in various
professional journals and has contributed articles to many
health magazines and newsletters. Dr. Young received her
doctorate and master's degrees in Nutrition from NYU, and her
bachelor's degree in Economics and Health Care
Administration from the Wharton School of the University of
Pennsylvania. She is also a registered dietitian.

Meal replacements have received a positive opinion from EFSA, showing that weight management can
succeed in the stringent EU health claims arena. Standards are different in the US. This session will look
at how to build the science to get a claim, whether it’s from FDA or EFSA.
Moderator
Shane STARLING Shane Starling is an editor for NutraIngredients‐USA.com and
Editor NutraIngredients.com. He has been writing about the global
Nutra Ingredients USA food industry since 2001 on matters such as health claims,
food marketing, GMPs, ingredient innovation, food science and
market trends. He works from Decision News Media's
Montpellier office in the south of France, where he likes to go
road cycling.
Speakers
Dr. David MELA Dave Mela is Science Leader for Weight Management, based
Science Leader at Unilever R&D Vlaardingen, The Netherlands. He followed a
Unilever PhD in nutrition with an academic research career in the US
and UK, and has published widely on topics relating to
biological and behavioral aspects of food acceptance, appetite
control and energy balance. Since joining Unilever in 1998, he
has had various team and project leadership responsibilities
related to the identification, feasibility assessment, and clinical
substantiation of weight management innovations. He also
provides guidance relating to technical and regulatory issues,
and represents Unilever as a scientific liaison to external
academic and trade groups.

Devin DOMOND Devin Willis Domond has been an attorney at the Federal
Attorney Trade Commission in the Bureau of Consumer Protection's
Federal Trade Division of Advertising Practices since 2007. Her work consists
Commission mainly of investigations and law enforcement actions involving
the marketing of dietary supplements, including products
represented as causing weight loss. Prior to joining the FTC,
Ms. Domond was an attorney with a nonprofit organization
that focused in civil rights and liberties, an associate in private
practice, and served as a pro se judicial law clerk for the U.S.
District Court for the Eastern District of Virginia. She received
her J.D. from the University of Michigan and her B.A. from
Dartmouth College.
