Beach Restaurant
Are you tired of the same old restaurants? Are you ready to try something new? If you're in the northeastern U.S., you
can go to The Cove. That's the name of a restaurant on the Atlantic coast. They cook a lot of good seafood there, but
the most popular dish is the New England clam bake.

A clam bake begins outside. They cook it on the beach! Restaurant workers use wood to make a fire in the sand. The
fire heats up several large rocks. Then, when the rocks are very hot, the workers put wet seaweed on top of the
rocks. On top of the seaweed, they put three kinds of seafood, potatoes, onions, and corn. Then they cover
everything. It cooks for about an hour. If you arrive early enough, you can watch the whole process. Then you go
inside the restaurant to eat.

At The Cove, the clam bake arrives at your table "family style." That means they put everything on a big plate in the
middle of the table. Then you take some of the food and put it on your own plate. Everyone gets a bowl of melted
butter, too. You can put the seafood and vegetables into the butter, or you can put the butter all over the food on your
plate.
If you want to try a real New England clam bake, this is the right place. The Cove is only open from April 15 until
November 1, so make plans to go there on your next vacation.

What is the reading mostly about?

Urban Growth
My family moved to this city more than 25 years ago, so I grew up here. In the last ten years, however, the city
has grown and changed a lot. One good thing about the growth is better public transportation. Many of the new
residents live in suburbs outside the city, and now there are buses and trains that go to those places. When I was
younger, there were buses downtown, but no other public transportation. Another good thing is the number of
recreational activities. The city government has more money now, so there are more sports programs and musical
performances for the public than there used to be.
Of course, the growth of my city has brought some disadvantages as well. The city is simply more crowded
now, and the traffic is much heavier. I miss the days when I could take a long walk on the weekend and enjoy some
peace and quiet. It's almost never quiet here now. The other thing I miss is running into friends by accident. When
there were fewer people here, I would often see people I knew. We went to the same places after school, and we
shopped in the same stores. These days, my friends live far apart. There are many more shops and other places to
go, so we rarely see each other by accident. Instead, we have to make plans to get together.

When did the city begin to grow and change?

The Great Chef Challenge

It was not "cooking as usual" at the third annual Great Chef Challenge on Saturday afternoon. Seven chefs came
from restaurants both nearby and far away to be part of the challenge, which put their culinary skills to the test.

The rules are fairly simple. Each chef must bring two assistants and his or her own cooking equipment such as
knives, bowls, and cutting boards. Equipment such as cooktops and grills were provided by the Hotel Benson, which
hosted the event. The hotel also gave each team kitchen staples such as salt and flour. The surprises were local
ingredients---seafood, meats, fruits, and vegetables---which were revealed to the chefs on the day of the event. The
teams were required to use all of the local ingredients.

The action began with the appetizer course. The chefs were given local shrimp and fresh lettuce. The judges were
pleased with all the appetizers, but the winner was chef Angela Milosz, who created Asian influenced sesame shrimp
lettuce wraps. For the main course, each chef received a whole chicken and locally grown tomatoes. Because of an
accident with one box of tomatoes, the hotel nearly ran out! But the chefs solved the problem by sharing the
remaining tomatoes. Again, all of the dishes were impressive, but the prize-winner was a stewed chicken dish made
by chef Marcus Sturtevant and his team. The winner in the best dessert category was Lucia Milano, whose pear tart
had the judges asking for seconds.

The Great Chef Challenge tests the contestants' physical and mental abilities along with their cooking skills. The
event lasts for over four hours, and the chefs and their assistants are on their feet and running around their kitchen
areas the whole time. The teams must also be extremely creative, not just once, but three times during the day. One
chef almost gave up when his grill went out during the preparation of his grilled chicken with Indian spices, but his
team got the fire going again and reassured the chef until he was calm enough to continue.

The Great Chef Challenge is open to chefs from anywhere in the world, so it's a wonderful opportunity for chefs to
learn from each other. The application deadline for next year's competition is only three months away. Chefs who are
interested in the challenge must submit two original recipes along with a letter explaining why they want to participate.

Tough Times
Not very long ago, the Sotomayor family watched their neighbors to see who was buying more stuff---more new cars,
more furniture, even more meals at good restaurants. Nowadays, neighbors are watching each other to see who can
spend less.

In tough economic times, consumers see prices going up while their salaries stay the same. They're looking at their
old spending habits for anything that's not a necessity. Brent Boyle is the author of the 2009 book Spending Less and
Living More. Boyle says that families are giving up luxuries and saving money they need for the necessities of life.

In the Sotomayor family, father Robert has given up his gym membership. "Why pay over $600 per year and then
drive to the gym?" Instead, Robert walks more places and rides his bicycle to work. The family still owns two cars, but
they traded in their gas-hungry SUV for a two-year-old economy car. "A new car loses about half of its value in the
first two or three years," says Robert. So instead of paying of paying $22,000 for a brand-new car, they paid $14,000
for a car that should still run for many years.

The family is also cutting back on the little things. Robert's wife Lilia is making coffee at home every morning rather
than spending over $3 on the mocha lattes she used to buy. That five-day-a-week habit was costing around $750 per
year! Lilia is also bringing her lunch to work every day instead of paying restaurant prices. She's too embarrassed to
say how much she used to spend on lunch, but the savings on home-cooked meals over restaurant meals can be
quite significant.

According to Boyle, most families can find ways to save if they're willing to give up a few of life's luxuries. Buying
ordinary blue jeans for $20 can save $80 or more compared to the price of designer jeans. Renting videos and
watching them at home only costs a few dollars, but a family of four can easily spend $30 at the movie theater. And
one of the easiest luxuries to cut out? Everything you drink that isn't water. "People don't really need all the soda,
flavored vitamin waters, and fruit juices that they're drinking," says Boyle. "It's kind of like pouring money down the
drain."

In the past, Lilia Sotomayor bought mocha lattes ____.

Select one:

a. every day

b. five days a week

c. a couple of days a week

World Heritage Sites

It would be difficult to visit all 890 World Heritage sites on the United Nations Educational, Scientific, and Cultural
Organization's (UNESCO) list in one lifetime, but some tourists try. And it's not hard to understand why. The World
Heritage sites are places with cultural or natural features of "outstanding universal value," according to UNESCO.
They're places the world agrees are worth saving for future generations. It's quite a distinction!

Along with that distinction comes recognition, and since travel and tourism now comprise one of the world's largest
industries, designation as a World Heritage site can be a welcome way to attract visitors to places badly in need of
income. In Cambodia, the ruins of the Angkor Wat temple attract two million tourists every year. But some people
worry that the nearby city of Siem Reap has become overrun with hotels and restaurants to accommodate the
tourists, and that this uncontrolled development will detract from the experience of visiting Angkor Wat.

Other World Heritage sites have been placed on the List of World Heritage in Danger by UNESCO. These places
have been threatened or damaged by war, natural disasters such as earthquakes, or by tourism and development
that resembles the situation in Angkor Wat. In some ways, this list represents the original intention of the World
Heritage sites. In 1991, for example, the Old City of Dubrovnik in Croatia was heavily damaged by warfare. The site
was placed on the danger list, and UNESCO provided restoration experts and financial support to help the Croatian
government replace roofs and repair buildings.

Damage from tourism is something that UNESCO has gotten involved in more recently. The organization is currently
studying the impact of frequent helicopter flights over the Iguacu Falls in Brazil, and in Ecuador, the impact of tourism
on the delicate ecosystem of the Galapagos Islands. The organization has already been successful in keeping
development away from some World Heritage sites, preventing the construction of a salt factory inside the Whale
Sanctuary of El Vizcaino in Mexico and a highway project near the Giza Pyramids in Egypt.

Despite criticisms over UNESCO's limited ability to enforce its recommendations on the maintenance of World
Heritage sites, as well as the inclusion on the list of sites with questionable cultural or natural value, the organization
has at least recognized the importance of making future tourism to the sites sustainable.

The reading is mainly about ____.

The best heading for the third paragraph would be ____.

Select one:

a. The Origins of UNESCO World Heritage Sites

b. UNESCO's Tool for Preserving World Heritage Sites

c. Saving World Heritage Sites After Natural Disasters

The correct answer is: UNESCO's Tool for Preserving World Heritage Sites.
