STUFFED SOY MILKFISH

Stuffed Soy Milkfish is a dish that is best when there’s a party or


celebration. It is stuffed of vegetables and it has soy sauce. This dish
is really delicious that you will always cook this when there’s a
party!

SERVINGS: 5 COOKING TIME: 40 minutes


INGREDIENTS: 4 tablespoon vegetable oil

1 piece whole milkfish 3 teaspoon salt

3 ½ piece of chopped onion 2 teaspoon ground black


pepper
5 cloves chopped garlic
1 teaspoon minced ginger
4 pieces chopped tomatoes
Banana leaf
2 pieces carrots
FOR SAUCE:
1 tomato
2 tablespoon Soy Sauce
3 pieces calamansi
¼ cup lemon extract
3 tablespoon calamansi extract
2 ½ teaspoon brown Sugar
6 tablespoon soy sauce
2 piece Onion
3 pieces beaten eggs
2 clove garlic
STEP 2: Wash the Milkfish
Pat dry it after washing, make sure the scale is still intact.

STEP 2: Remove the meat/guts


First, Make a little slit at the back of the milkfish near the head.
Second, Open the head and move the tail first. Insert a spoon or fork to scoop out the
meat/gut.
Third, Put it on a running water to remove the blood. Move the spoon/fork inside the
milkfish in order to get all of the meat.
Fourth, Move the spoon/fork inside the milkfish in order to get all of the meat.
Fifth, Wash it to clean off the blood and set aside the meat.
STEP 3: Marinate the Milkfish
Marinate the milkfish with the 3 pieces calamansi and 3 tablespoon
soy sauce. After marinating, set aside.

STEP 4: Cook the milkfish meat.


Pour a 1 teaspoon of vegetable oil on a pan, heat it at medium
heat.
If it’s already hot, cook the fish meat.
After cooking, let it cool.
STEP 5: Season and cook the seasoned milkfish meat
First, Heat the 2 tablespoon vegetable oil on a big pan or wok.
Second, Stir-fry the 3 ½ piece of chopped onion, 5 cloves chopped garlic
4 pieces chopped tomatoes, 2 pieces chopped carrots.
Third, Add the milkfish meat then season it with 3 tablespoon calamansi
extract and 3 tablespoon soy sauce.
Fourth, Season it with 2 teaspoon salt and 2 teaspoon ground black pepper.
Fifth, Mix it well and adjust the flavour if needed. Let it cool if the flavour
is fine.
STEP 6: Add the eggs in the milkfish meat
First, Add 2 pieces eggs in the cooked milkfish meat.
Second, Mix it well.

STEP 7: Stuffing inside the cooked Milkfish


First,Rub 1 teaspoon salt on the milkfish skin.
Second, Stuff the cooked milkfish meat inside the milkfish skin.

STEP 8: Grill the Milkfish


First, Apply 1 tablespoon vegetable oil on the milkfish skin and cover it with
a banana leaf
Second, Grill it on a hot charcoal for 20 minutes. Make sure to flip it to
avoid the fish to burn.
FOR THE DIPPING SAUCE:

STEP 1: Make the dipping sauce


First, Combine 2 tablespoon Soy Sauce , ¼ cup lemon extract, 2 ½
teaspoon brown Sugar, 2 piece Onion and 2 clove garlic.
Second, Stir it until the sugar is dissolved.
Third, Cool it for 10 minutes.
Fourth, Adjust the flavour if needed.

NOTES:
Milkfish: The bigger the fish, the longer time it needs to be cook.

Sauce: You can also use ketchup for dipping sauce. You can also add the leftover fillings on
the soy sauce.

Cooking: You can fry it into a pan. Fry it for 10 minutes, occasionally turning it to avoid
burning one side.

Stuffing: You can add any vegetables or food that you may think that is goes well with the
milkfish.

Garnish: You can garnish it with any green vegetables.

Leftover: Leftover of fillings is not a problem, you can use it for shanghai or fish patties.
