ANALYSIS
HEADLINES

▪ With high rents and moderate consumer confidence, prime locations are more vital than ever
but they are also less affordable too
▪ As a result of price increases, consumer foodservice through lodging sees the most dynamic
growth in 2015, increasing by 3% in current value terms, well ahead of the CAGR of 1% it
achieved over the review period
▪ Consumer foodservice through retail is expected to increase at a constant 2015 value CAGR
of 2% and a CAGR of 1% in terms of the number of outlets

PROSPECTS

▪ The stronger fight against tax fraud, which will result in more stringent accounting procedures
in the forecast period, will put pressure on many small and independent businesses in
consumer foodservice overall which is expected to lead to a continuing decline in standalone
outlets. Consumer foodservice through retail is the only category which is expected to see
growth in terms of outlet numbers given the untapped expansion potential and the generally
good prospects for existing businesses in such locations.
▪ Standalone outlets characterised consumer foodservice holding an 83% share of outlet
numbers, a 69% share of transactions and a 79% share of value sales in 2015. The solid
value growth in standalone outlets was largely the result of its high share of smaller,
independent businesses which had better tax discipline in 2015 as they prepared for the tax
reform which comes into effect in 2016.
▪ Better tax discipline is a major factor behind why all of the categories are anticipated to see
positive constant 2015 value CAGRs over the forecast period, despite actual consumer
spending only expected to have limited growth potential given the moderate economic outlook

and deflated consumer mood. Among the largest price increases are expected to be seen in
consumer foodservice through lodging as players in the budget to mid-priced range are
expected to cut back or give up their foodservice businesses completely while the role of
premium restaurants will likely increase in this field.
▪ Despite public criticism on urban sprawl and soil sealing within Austria notably increased
during the review period, plans for many more new shopping centres offers good growth
potential for consumer foodservice through retail. Among the next openings will be Seestadt
in Bregenz in 2017 in addition to a major expansion of HUMA Einkaufspark in Vienna.

EXECUTIVE SUMMARY

New Tax Requirements Leads To Favourable Data


Consumer foodservice saw good growth in volume and current value terms in 2015, leaving
behind a relatively flat review period which was the result of low consumer confidence and a
moderate economic outlook. Sales benefitted from the requirement on outlets to use cash
registers to improve accounting in order to avoid tax evasion. Although the new legislation did
not come into effect until 2016, already in 2015 it was positively affecting sales figures. This was
because operators were upgrading their systems in anticipation of the new laws. With fewer
sales now going undeclared, this expanded the official size of the industry, giving its figures a
boost in 2015, especially in terms of independent consumer foodservice (Euromonitor does not
include undeclared sales in its data). These changes were also the decisive reason why many
operators decided to close their business and also why some potential new entrants shied away
from entering the industry.

Mood Is Getting Worse Amongst Operators


Operators complained about the increasingly unfavourable market conditions in Austria. New
labelling requirements regarding allergen substances resulted in considerable effort and cost on
the part if manufacturers in 2015 and the tax reform 2016 will lead to further expenses and
stricter controls. A general smoking ban in consumer foodservice will come into effect in 2018.
Even though it will replace a highly unsatisfactory partial ban, operators fear a massive drop in
revenue. They also intensified their fight against Paragastronomie, which accounts for
thousands of events where food and drinks are served by non-commercial associations with far
reaching tax benefits every year.

Mcdonald’s Leads, But Competition Is Increasing


McDonald’s remained the clear leader in consumer foodservice in 2015 and with several
major innovations has finally adjusted to some of the latest trends in burger fast food in order to

Independent businesses continued to dominate consumer foodservice and registered better
growth in 2015 mainly because of their much larger potential for improvement in terms of tax
