Scope:
Thermal process of Jonah Crab cluster sections for the [redacted]
This study was designed and conducted by, [redacted], and the report completed 10/06/2019
Purpose:
To establish statistical process controls for the cooking of Jonah crab. This study is designed to establish a 6D process targeting the
inactivation of Listeria Monocytogenes. The following observations and measurements in this study can be applied to the following:
Product Temperature: internal product temperature sampled after and before the cooking process
Water Temperature: cook water temperature measured at the beginning and mid-point of a ten minute cook cycle
Synopsis:
Jonah Crab is backed and sectioned by claw and cluster. Sections are placed separately in perforated baskets weighing 30 lbs. Baskets
are stacked into carriages 4 baskets in height and side by side for a total of 8 baskets per set and averaging 477 lbs. per batch.
Generally, 2 of these sets are placed into the forward section of the cook tank in tandem as a batch. An additional 2 sets follow in
tandem (batch 2), however these were not sampled. The cook tank is operated by a heat exchanger system powered by gas burners in
an adjacent room. The cooker operator determines the readiness of the cooker bath by evidence of a rolling or vigorous boil. A cook
tank map (Figure A-4) is included at the end of this report.
Test methodology:
Jonah Crab cluster sections were sampled with a two channel type K thermocouple device (serial number D19231042). The
calibration of the device is current as of the date of completion of this study. Additionally, the accuracy of this device was challenged
with a boiling water test with a variance of +.9℉ sensor 1, and +.5℉ sensor 2 with a standard of 212.0℉. All other process control
equipment calibration is challenged by quality control during preop inspections.
The reference temperature, Z-value, F-value used in the study were established by the USFDA in Table A-3 Fish and Fishery Products
Hazards and Controls Guidance Fourth Edition – AUGUST 2019
The largest crab section was visually selected, the thermocouple probe secured to the sample, and centered in the basket. A calibrated
thermistor was used to check both the cook water and product temperature prior to the start of cooking. The sampled sets were then
placed into the cook tank and moved to the forward section of the tank were the remained until removed by chill room operators for
EPIPT verification.
Conclusion:
Table A-1 summarizes F-values and cook times. Raw temperature data and temperature sets used for F-value calculations (Table A-2,
A-3) are included. Based upon the slowest heating sample (Table A-2 s1t2, Table A-3 s1t2) a 6D listericidal process is achieved at 9
minutes for cluster and 7 minutes for claws. Based upon the results of this study, the following critical limits may be applied: a batch
weight not to exceed 480 lbs., a product starting temperature equal to or greater than 50.0℉, a cook water temperature equal to or
greater that 211.0℉, a mid-point water temperature equal to or greater than 208.0℉, and a cook time equal to or greater than 10
minutes OR EPIPT of 185℉ or greater for 1.2 seconds as measured by the top, middle, and bottom of cook set.
