CHAPTER 1
PROBLEM AND ITS BACKGROUND

This chapter provides an introduction to this research study, including the

introduction, background of the study, objectives of the study, theoretical framework,

conceptual framework, scope and delimitation and definition of terms.

INTRODUCTION

Burger is a sandwich consisting of one or more cooked patties of ground meat,

usually beef, placed inside a sliced bun. Hamburgers are often served with lettuce,

bacon, tomato, onion, pickles, cheese and condiments such as mustards,

mayonnaise, ketchup, relish and green chili. The term hamburger originally derives

from Hamburg, Germany’s second largest city. In High German, Burg means “fortified

settlement” or “fortified refuge” and is a widespread component of place names.

Hamburger in German is the domonym of Hamburg, similar to Frankfurter and wiener,

names for the other meat- based foods and demonyms of the cities of Frankfurt and

Vienna (Wien), respectively. The term “burger”, a back- formation, is associated with

many different types of sandwiches similar to a ground meat hamburger, sometimes of

different meats like the buffalo burger, venison, kangaroo, turkey, elk, lamb, salmon

burger or veggie burger.

BACKGROUND OF THE STUDY


Burger is introduced in late 1950’s by the westerns colonized the Philippines.

Nowadays, you can find all kinds of burgers ranging from simple to the extremely

complicated. You have your traditional burger- plain, tender, not made complicated by

adding too many flavors. There are some restaurants that offers ridiculous burgers

which, by their size, it makes the consumer physically impossible to take a bite.

Regardless of the varieties, people are enticed that great burger should give a sense

of comfort because of the deliciousness and juicy feeling when you take a bite.

However, burgers can contribute to weight gain and have other harmful effects to

consumer health. According to the study of Stein who specialize in weight loss and

sports nutrition, the author stated that eating burger will gain weight if the customer

consumes more calories than the normal expend. Burgers can be high- calorie foods.

Stein added that a double hamburger is twice the calories. French fries large with a

regular soft drink. The researcher found that the burgers can be high in dietary

cholesterol and saturated fat. These can raise levels of cholesterols in your blood and

increase your risk of getting cardiovascular disease or heart disease. In addition, to

the previous statement, burgers can be high in sodium diet can lead to high blood

pressure and an increase risk of heart disease, stroke and kidney disease. Research

has also shown that foods in high in fat increase the risk of cancer.

According to the research conducted by the Philippine Health Statistics and

Department of Health, Cardiovascular disease or better known as Heart Disease, is

the leading illness that caused Filipino’s death. DOH cited the main cause of the

problem is the poor lifestyle of the Filipino. Various factors considered as poor lifestyle.

It may be vicious habits, physical activity and nutrition.

To address and to be aware of this current situation or problem that most

Filipino people are having, researchers would like to the target population to lessen

the risk of having heart disease/ cardiovascular, stroke, hypertension or high blood

pressure and even risk of getting cancer. The study centre is the health benefits

getting from modification of the traditional beef patty to banana blossom patty. The

researchers desire to make best use of the resources for known as tropical country.

Banana tree is major staple food crop for millions of people in developing countries. In

the Philippines, bananas are cooked in ways that are similar to potatoes. A Filipino

person relates the banana tree is the ideal to look up to when it comes to a no

wastage policy because almost parts of banana tree can be used.

Researchers conduct a study through the method of questioning how banana

blossom can be tasted like beef patty and what are the health benefits will banana

blossom produce. Here are the following; bananas help lower cholesterol, it facilitates

reduction of cholesterol level because of four main water- soluble fibres such as

pectin, psyllium, guar gum and beta glucan effectively lower without causing any kind

of disturbance. Another health benefit is bananas cut down risk of stroke. According to

the study of the New Zealand journal, regular consumption of banana, as part of daily

diet, cut down risk of stroke related because of bananas are rich with high doses of

potassium reduce the incidence of stroke. Bananas reduce risk of various types of

cancer especially bowel cancer because it has antioxidants and dietary fibre.

Researchers conducted a trial for tasting banana blossom and making it like a beef

patty.

OBJECTIVES OF THE STUDY

The objective of this research is to develop and evaluate the health benefits of

banana blossom compared with the usual beef patty. This banana blossom patty an

alternative burger patty and cheaper in cost compared with the existing beef patty.

a. To develop a banana blossom patty that comprises (composition of banana

patty.. ingredients)
b. To improve the packaging materials for the proposed banana blossom patty
c. To provide an alternative process and ingredients for a burger patty
d. To evaluate the banana blossom patty as substitute to the existing beef patty for

effective alternative use in burger sandwich.

PROCESS
1. Get your banana blossom
2. Remove the matured bracts but save all the young
banana fingers.
3. Wash thoroughly in running water and rinse well.
4. Chop thinly (young bracts and fingers) and cook
with small amount of boiling water until tender.
Drain and set aside.
5. Saute onions and garlic. Mix with the cooked
banana blossoms together with the rest of
ingredients.
6. Fry two spoonful of mixture until golden brown.

SCOPE AND DELIMITATION OF THE STUDY


The study aims to modify the poor lifestyle of the consumer by improving the

health benefits from the burger consumption. The researchers would like to determine

the difference of existing product- traditional beef patty and new invented product-

banana blossom patty. The aspect considered for this study is pricing and costing,

taste, distinctiveness and packaging of the two different products. Variables other than

what is specified will not be treated in the research.

Marketing strategy is not included to the study.

-being aware of what we eat is imperative to an overall healthy and happy life.

-due to the distinctiveness of the study, it may be a magnet for other consumer to try

the new product because of the health benefits and cheap cost.

-would like to study the benefits and help the people to modify their lifestyle and to

apply the innovation in all works.

-this study is important to the researchers for applying all the theoretical knowledge

into concrete facts.

-this study can enhance quality of life by producing a new idea from the natural

resources

-this study is to promote economic prosperity, a healthy community, and social well-

The researchers conducted the study by giving some interviews to the

respondents of Central Colleges of the Philippines or CCP.

PROFILE OF THE RESPONDENTS


A total of 50 respondents were interviewed. 48% were female and 52% were

male. 34% of them are 13 years old, 66% are 14 to 25 years old. 100% of the

respondents are students.

DATA GATHERING PROCEDURE


In order to come out certain information, lots of effort in searching is involved.

This chapter includes the methods of research used, the sources of data and

procedures on gathering data such as interviews, internet surfing and some related

articles and blogs.

▪ Interview- large number of information, opinion and exercise are required to

complete the data. The researchers consult people who were very much involved in

this kind of study. Gathering information are done through asking about the problem,

opinion that will contribute in doing research study and experience the locate effects of

it. The researchers conducted interviews and asked some questions that will be

helpful to the study.

▪ Research- it also play one of the important roles in data gathering. It is major

instrument used in data gathering because it is very available and accessible to collect

information.
