Why we crave junk food


Most of us know that junk food is unhealthy. We
know that poor nutrition is related to heart problems,
high blood pressure, and other diseases. Studies
even show that eating junk food has been linked
to increases in depression. But if it’s so bad for us,
why do we keep doing it? There is an answer. And
the science behind it will surprise you.
Steven Witherly is a food scientist who has spent
the last 20 years studying what makes certain foods
more addictive (and tasty) than others.
According to Witherly, when you eat tasty food, there are two factors that make the
experience pleasurable.
First, there is the sensation of eating the food. This includes what it tastes like (salty,
sweet, etc.), what it smells like, and how it feels in your mouth. This last quality can be
particularly important. Food companies will spend millions of dollars to discover the most
satisfying level of crunch in a potato chip. Their scientists will test for the perfect amount of
fizzle in a soda. These factors all combine to create the sensation that your brain
associates with a particular food or drink.
The second factor is the actual macronutrient makeup of the food – the blend of
proteins, fats, and carbohydrates that it contains. In the case of junk food, food
manufacturers are looking for a perfect combination of salt, sugar, and fat that excites your
brain and gets you coming back for more.
The good news is that research shows that the less junk food you eat, the less you crave
it. My own experiences have mirrored this. As I’ve slowly begun to eat healthier, I’ve noticed
myself wanting pizza and candy and ice cream less and less.

Time for an ambush*!


Eating is a political act. This is a fact the Slow Food
movement has embraced from the beginning. The
same was defended in a conference organised by
Alice Waters and Jamie Oliver, two outstanding
personalities that campaign daily so that everybody
can have access to healthy and nutritious food that is
produced and prepared in an eco-sustainable way.
Feeding children ‘real’ food is an idea close to the
heart of Alice Waters. In 1995 she set up the Edible
Schoolyard program by buying a plot of land in
Berkeley, California, which she transformed into an
organic garden. The original plot of land has since
been added to, with 5 new gardens across America
that serve as educational spaces for children. 
Unfortunately, current educational paradigms don’t leave much space for these ideas. Alice
explained that the initial challenge was to convince adults that this kind of education was
worthwhile. As for the kids: ‘We’re not telling them what to do. We’re putting them in a beautiful
environment where they are likely to fall in love with nature’. Alice’s latest endeavor is
to campaign for school lunch reform on a national level in the USA. 
Jamie Oliver is no stranger to such a campaign. In 2006 the four part documentary series
Jamie’s School Dinners* captured the hearts and minds of the British public. Over the last 8
years since it aired, an extra one billion pounds has been invested in the school dinner system
by the UK government. Initial research suggests that the project has improved the health of
children, boosted exam results and improved their classroom behavior. Such results are just the
beginning. Jamie Oliver has now launched his Food Revolution, which seeks to promote food
education in schools. He told the audience, in emphatic terms, the size of the challenge that lies
ahead: ‘In America we’re up against 4,6 billion dollars of advertising crap to kids. There is not
one thing we can do to fix the problem; it has to be an ambush!’ 
In fact, changing the system is not easy. Last year, obesity and obesity-related illnesses
killed more people than malnutrition.
The idea of good, clean and fair food in our institutions shouldn’t be shocking. It should be
seen as an investment. Jamie and Alice have helped show us the road: now we need to
convince people (and governments) to walk down it.

*dinner – in the UK – the main meal of the day. For most working-class people, this is eaten at lunchtime.

There I was at a birthday party. I arrived with my best friend Sheila and we approached a group of boys and girls she had
met a short time before. Some of them were smoking and they offered us cigarettes. I said ‘No, thanks’, but Sheila took a
cigarette and one of the boys helped her light it. I was shocked. I had never seen her smoke and probably it was her first
one, because she coughed and her eyes filled with tears as she tried to control the cough. Some boys laughed. I didn’t. I

type of food is fattening and nutritiously poor and leads to diseases, like obesity and diabetes. I think he should be more
active and eat healthy food.

she has of herself. Anorexia is an eating disorder characterized by low body weight and body image distortion with an
obsessive fear of gaining weight, which makes people eat very little food.

Interview: Healthy eating with Gabrielle Reece
For Gabrielle Reece, health and fitness is a full-time job. Since retiring from professional volleyball, she has worked as a
model, spokesperson, health and fitness writer, editor and mom. Reece is married to professional surfer Laird Hamilton
and has three kids. She recently revealed her eating habits.
Describe your typical breakfast.
I start every day with a smoothie but it's not like a drink for me; my smoothies are thick and nutritious. They have to be
filling to get me through my workout. Smoothies are also a good opportunity to add nutrients – like iron and protein – that
you may be missing in your diet and mask them with other flavors.
What ingredients do you put in your smoothies?
Protein powder, peanut butter, berries, almond milk and bananas – anything that will help sustain me through my
morning workout.
Aside from your smoothies, name five foods you can’t live without.
Chocolate is number one, dark if I am trying to be good. I don't drink alcohol so I drink bubbly water and tea. I am really
mindful of trying not to go up and down, so I stay away from sugary drinks to sustain my energy. I really like red meat. I
don't eat a lot but at a certain point, if I haven’t had it for a while, I really want it. Every once in a while I like having pasta
or pizza.
What else is important in keeping a healthy diet?
Just like your body gets used to the same exercises, it gets used to the same foods; so it’s good to switch up your diet.
How does nutrition affect fitness?

Your workout won’t give you the results you want if you’re eating the wrong kinds of food. A certain level of caloric
restriction helps but it's not all about diet, it’s about how foods affect your body and what you're doing to get the look that
you want.
Can you sum up your nutrition philosophy?
One of my trainers says the closer you can eat to being a cave man, the better. If it can live on a shelf for 50 years, I
won't eat it or feed it to my family.

over your life so much that it may seem like you can never get rid of it. But today, I want you to know that any moment could be
the moment you kick that habit and change your life for good. That’s what my friend and guest on my show, Whoopi Goldberg,
did when she recently quit cigarettes for good after decades of smoking. What inspired her to stop might surprise you, but could
just be your ticket to better health, too.
Whoopi began smoking when she was just 12 years old and smoked her entire adult life. Even though she overcame many
obstacles and other addictions over the course of her life, she couldn’t shake her cigarette habit. Until one day everything
changed. She saw a video from the Cystic Fibrosis Foundation about two young children, Keith and Kennedy, who suffer from
an incurable genetic disease called cystic fibrosis, which makes it incredibly difficult to breathe. However, Keith and Kennedy
don’t let their disease slow them down. Even though they both have to take multiple medications and do special breathing
treatments twice a day, they are active, happy kids.
It’s not hard to see why Whoopi was inspired by these strong, brave children. After she heard Keith say that what he wishes for most
is a cure for CF, she knew that even if she couldn’t cure his disease or give him a new pair of lungs, the least she could do was to
stop hurting her own. In that moment, she put a stop to decades of dangerous smoke inhalation.
I am so proud of Keith and Kennedy and Whoopi for realising that life’s challenges never defeat you. In fact, every new
moment provides you with a chance to accept the challenge to make your life better. This isn’t easy but it’s always worth
it. I hope you’ll join Whoopi, Kennedy and Keith to embrace the bravest part of yourself and change your life now.
