Observation: A full squeeze bottle of cilantro lime aioli in a solid pan in the top loader of the condiment cooler was
noted at 49 F held this way overnight. (All other foods in unit noted at correct temperature). Cooler is not designed to
cold hold squeeze bottles in this manner.
Corrective Action(s):Discard cilantro lime aioli noted in the temperature danger zone for extended time. Do not store
squeeze bottles of TCS foods in solid pan in top loader of unit. TCS foods must be stored at 41 F or less.
Action(s) Taken: Operator discarded cilantro lime aioli. Alternative storage options were discussed with PICs.

(8/26-9/2)(8/20-9/6); and house caesar (8/21).
Corrective Action(s):Discard food items held beyond safe shelf life. Train staff on discarding food according to date
mark.

Observation: The following foods prepared within the last week were not date labeled to control for unsafe growth of
Listeria: cilantro lime vinaigrette in condiment cooler; spinach dips, opened meat substitutes, cooked pasta, blanched
brussel sprouts in the right make cooler; pico, rice, cooked pork, cooked chicken, cooked beef, blanched green beans
in the upstairs walk-in cooler; and opened half a ham in the basement walk-in cooler.
Corrective Action(s):Date label all noted foods. Train staff on date labeling foods to indicate a discard date of no more
than 7 days from when opened/prepared (open/prep date + 6 days) to control for unsafe growth of Listeria.
