4-601.11 (A) - EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS
REPEAT OBSERVATION (A) Two soiled knives are stored in the clean knife rack above the prep table.
(B) Two soiled squeeze scoops are stored on the clean equipment storage shelf above the prep table.
(C) The deli slicer is soiled.
(D) The chopper stored on the shelf above the deli slicer is soiled.
Corrective Action(s): Adequately clean noted food equipment now and after each use or at least every four hours
of continuous use. Inspect food equipment and utensils for cleanliness before returning to clean storage. Provide
specialized cleaning tools if necessary to clean complex equipment like deli slicer and chopper. Maintain food
contact surfaces in a clean condition. Correct By: 11-Oct-2019
