JAPANESSE CLEAR SOUP

INGREDIENTS
TOOLS AND EQUIPMENT
QUANTITY DESCRIPTION
▪ Casserole 4 pcs ▪ Whole button mushroom (slice thinly)
▪ Stockpot with cover 1 Tbsp. ▪ Spring Onion (finely chopped)
▪ Gas or electric stove 1 pc ▪ Tofu (cut into small cubes)
▪ Knife ¼ cup ▪ Carrots (shredded)
▪ Chopping board 2 cups ▪ Chicken Broth
▪ Mortar and pestle ½ pc ▪ Lemon
▪ Strainer 1 Tbsp ▪ Soy Sauce
▪ Measuring cup 1 Tbsp ▪ Cooking Wine
▪ Measuring spoon ▪ Salt and pepper to taste
▪ Wooden spoon
▪ Soup ladle
PROCEDURE:

1. Wash and chop the veggies


Under the running water, wash all the veggies and keep
them aside. Now take a chopping board and chop green
onions finely. In case of lemon and mushrooms thinly
slice them and keep them separately. Now shred the
carrots using a shredder.
2. Take a saucepan and put chicken stock into it. Simmer
the mixture on for 5-10 minutes. Now, add cooking
wine and soy sauce into it and stir well. Boil this
mixture for 5 minutes.

3. Now, add mushrooms, green onions, carrots, lemon and


tofu cubes into the mixture and stir well. Boil the
ingredients in the pan for 5 minutes. Turn off the flame,
garnish with coriander and serve hot.
