We had so much fun (and only a slight hangover) making our


previous issue about Japan’s many ways to get tipsy, so we keep-
ing the momentum going by sampling Japanese craft beers.

Small brewpubs are popping up all around the country. Since


there are so many new, exciting brews to sample, the usual order
of toriaezu-nama (the first beer of the evening) seems like a
waste! Whether you prefer a light IPA or a dark and wholesome
porter, Japan has something for you.

We’ve done the hard work of narrowing down the finest hops
on tap at Tokyo’s best brewpubs. We also take an in-depth look
at some of Japan’s strongest craft breweries as we visit Hitachino
Nest, Yoho Brewing, Baird Beer and Minoh Beer.

And yes, there are many more amazing Japanese breweries. So


go out and find your favourite spot! Plus, with Danish Mikkeler
planning to bring its Mikkeler Beer Celebration extravaganza to
Tokyo this September, the Japanese beer scene is poised to take
it all one notch higher.

the shopping complex KITTE in Marunouchi. The
interior by Suppose Design Office features brightly

Malt grinding, mashing


“Mash” is produced by mixing
ground barley or wheat (malt)
with hot water. The starch is then
converted into sugar in a vat.

Filtering, boiling
After removing the malt husks in
the filtration tank, the clean wort
is then transferred to the boiling
vat. Hops are placed in the vat
to add aroma and bitterness.

Fermentation
The wort is cleared in a whirl-
pool, and transferred to the
fermentation tank after it has
cooled. The wort is fermented
for approximately 2 days in the
primary fermentation tank, and
then transferred to the second-
ary fermentation tank for 2
weeks of further fermentation.

Maturation
The horizontal maturation tank
to the right allows easy precipi-
tation of the beer and yeast, and
reduces the burden on the yeast
for easier maturation. The left
tank features a port window,
allowing the yeast to be seen.

Bottling
The matured beer is then
transferred to cans and kegs.
The volume changes a bit every
day, but approximately 2,000
cases (50,000 cans) are packed
every day on average.

formed comparing the taste of
the current production lot
against one produced by
another lot. YO-HO Brewing
devotes itself to providing a
stable product with little devia-
tion between production lots.
