Pepper sauce

Ingredients:
• 1 lb. peppers

• 300 ml vinegar

• 300 ml water

• 1 lb. pumpkin

• 9 g Onion

• 5 g garlic

• 25 g salt

• 16 g sugar

• 2.5 g xanthan gum

• 0.4 g sodium benzoate / preserving powder

Method:
1. Peel and deseed pumpkin, wash peppers, onions, and garlic

2. Blanch all in boiling water for 3 minutes.

3. Cool and blend

4. Mix gum and sugar


5. Put all ingredients except vinegar and benzoate into a clean pot and heat to 70
degrees Celsius, stirring constantly.

6. Add vinegar and heat to 85 degrees Celsius stirring constantly and hold for 5
minutes.

7. Remove from heat and add sodium benzoate

8. Fill into bottles.
