What are they and what is the difference?

Quoting: When you copy directly from a text word for word.

Paraphrasing (from the Greek ‘paraphrasis,’ meaning literally ‘to tell in other words.’):
When you put the ideas of another author into your own words. To avoid plagiarism when
paraphrasing, it is essential that you do not include too many words from the original text.

Summarising: When you use your own words to draw out the key points or main
arguments of the original text, significantly reducing its length.

What’s the difference?

Paraphrasing and summarising are similar but differ in their objectives.
The purpose of a summary is to condense source material into a shorter form. Paraphrasing,
however, is not about how long it is but resaying what is being said but in different form
than the original.
