EXPERIMENT NO :- 05

EXPERIMENT NAME :- PREPARATION OF 50% COCONUT OIL EMULSION

THEORY

An emulsion is a mixture of two liquids that would not normally mix together. Emulsions can be

“oil-in-water” emulsions that consist of oil droplets dispersed in water or some other aqueous

dispersion. For the stabilization, the emulsifying agent are adding.

The emulsion can be divided as ,

 Oil and water (O/W) emulsion

 Water in oil emulsion

PROCEDURE

 50% coconut oil emulsion with a commercial emulsifying agent

Firstly the 50g of coconut oil was weighed in to a beaker and 10g of Ammonium Laurate and

40g of hot water was weighed into another beaker. After that it was mixed and kept under the

emulsifier to make the emulsion.

The other emulsion was prepared by 50 g of coconut oil was weighed to a beaker and 48g of hot

water and 2g of Emulvin w was weighed to another beaker. And then it was combined and after

that it was emulsified using the emulsifier.

DISCUSSION

An emulsion is a mixture of two or more liquid in which one is present as droplets of

microscopic or ultramicroscopic size distributed throughout the other. In this practical the 50%

of coconut oil emulsion with commercial emulsifying agent was prepared. The coconut oil is not
mixig with water therefore a technique should use. In here the emulsification technique was

used. The dispersed phase is known as internal or discontinuous phase and whereas the

dispersion medium is known as the external or continuous phase. Based on the dispersed phase,

it can be categorized as oil in water (O/W) it is oil droplets dispersed in water, water in oil (W/O)

water droplets are dispersed in oil and the other one is the water in oil in water(W/O/W) it is

water in oil emulsion dispersed in water multiple emulsion. The prepared 50% coconut oil

emulsion is belongs to the water in Oil emulsion.

Emulsions are stabilized by adding an emulsifying agent . these agents have both a hydrophilic

and a lipophilic part in their chemical structure. All emulsifying agents get absorbed into the oil :

water interface to provide a protective barrier around the dispersed droplets.

Those emulsifying agent such as surfactants must exhibits the following characteristics to be

effective as emulsifiers.

 Good surface activity

 Should be able to form a condensed interfacial film.

 Diffusion rates to interface comparable emulsion forming .

The most common emulsifying agents are the surfactants and solids. The surfactants type are as

follows:

 Anionic – Sodium Stearate,potassium laurate, Sodium Dodecyl sulfate, Sodium

Sulfosuccinate

 Non ionic – Polyglycerol, Fatty acid ester, Lecithin

 Cationic – Quartenary Ammonium Salts, Amine hydrochloride


In this practical potassium laurate was used as the emulsifying agent.

CONCLUSION

Potassium Laurate was used as the emulsifying agent for the preparation of coconut oil

emulsion. This is belong to the water in oil emulsion method. The mixture was emulsified using

the emulsifier under a rotational.
