Riohacha’s airport at 1:00 pm, I had lunch there in Riohacha and I spent the
whole day around. At 3:00 pm I was eating friche in the main park, it is
delicious. Then around 3:30 pm I was walking around to know the place and
buying some souvenirs, at almost 7:00 pm that day I was doing the check-in
in the hotel, it is a wonderful hotel, with a swimming pool and excellent
service. On Thursday I was waking up really early, I was very excited because I
was going to travel to Cabo de la Vela, it is around 3 hours from Riohacha by
bus. There in Cabo de la Vela, the landscapes are really beautiful, I stopped
for a minute and I was drinking a delicious juice in a Rancheria in front of the
sea. Then I continued walking and I stopped again in the Arcoiris beach, an
amazing place full of sand colors and very calm. Finally, I went to Ojo del
Agua beach, where I was enjoying of calm and crystal waters to swim, after
that, I went to sleep in a Rancheria, it is a real and amarvelous experience.
On Friday the last day of my traveling, I was visiting El Faro, the most tourist
place in Cabo de la Vela and I was running because I also wanted to visit
Punta Gallinas, before coming back and I did it. There in Punta Gallinas I was
visiting The Taroa Dunes where is amazing to see the sand mountains and at
the end of those mountains, there is the gorgeous sea. On Saturday I was
coming back to Cali, were 3 amazing days full of moments and experiences
very hard to forget.
I can’t wait to take you there with me dear mum.
Hugs.

ASADO HUILENSE
Para 10 personas
Ingredientes:
7 libras de carne de cerdo
7 libras de costilla de cerdo
½ libra cebolla cabezona blanca
1 libra de cebolla larga
1 libra de tomate
½ libra de pimentón rojo
1 manojo de ajos
1 manojo de tomillo
1 manojo de laurel
2 cervezas
5 libras de papa negra
3 libras de yuca
Hojas de plátano
Arepas blancas
Insulsos

Al dia siguiente: The next day:

a degustar.
Step 3:
HUILENSE ROAST
For 10 people
Ingredients:
 7 pounds of pork
 7 pounds of pork ribs
 ½ pound white onion
 1 pound long onion
 1 pound tomato
 ½ pound red bell pepper
 1 bunch of garlic
 1 bunch of thyme
 1 bunch of laurel
 1/4 pound salt
 condiments to taste
 2 beers
 5 pounds of black potatoes
 3 pounds of yucca
 Banana leaves
 white arepas
 bland.

To start with, we must cut the meat into not very thin slices, remove the
excess fat from the pork ribs and store them in a container; then put the long
onion, the big-headed white onion, the garlic, the paprika, the tomato, the
thyme, the bay leaf, the salt and the condiments that you want in the
blender, I personally am going to use the GuisaMac that contains many spices
that they give a very rich flavor to the meat; let blend for about 10 minutes
and then add the mixture to the meat and ribs.
IMPORTANT: this mixture must be stored for 24 hours so that the meats take
on the flavor of the spices and when roasting you can savor the exquisite
flavor.

PREPARATION:
First: we put the properly marinated meat in the pans and put it in the oven
to roast at 120 ° C for approximately 20 minutes on one side and then 20
minutes on the other side. (For the Huilense roast, the meat should NOT go
on the grill since in that cooking the meat loses all its juices).
Second: while the meat is roasting, we peel the potatoes and yuccas and
cook them in different containers for 15 minutes.
Third: we put 10 liters of water in a large pot to boil, when the water is
boiling we add the banana leaves one by one, take them out and put them to
drain.
Fourth: at this time we must check how the pork and pork ribs are cooking to
turn them over and let them cook on the other side.
Fifth: we have the duly dry and clean banana leaves ready, our cassava and
drained potatoes to start serving.
Sixth: In this step we already proceed to serve, it is recommended that it be
done with the meat and the hot pork ribs so that the heat allows the banana
leaf to give it the necessary flavor. So on the banana leaf we put a portion of
pork, pork rib, two potatoes and two yuccas, white arepa and the bland; we
proceed to wrap it and leave it for an hour resting so that the flavors mix and
we proceed to taste.
