Chicken rice
INGREDIENTS
1 Chicken breasts, cooked and cut into small
3 Tablespoons canola oil
1 large red bell pepper, chopped
1 large yellow bell pepper, chopped
1 large green bell pepper, chopped
1 crushed garlic clove
1 medium big-headed onion, chopper
3 cups rice
5 cups of water
2 cups of mixed vegetables is small pieces (carrots, peas or green beans, green beans,
yellow corn)
1 chicken bouillon cube
Salt to taste
PREPARATION
Place the oil in a large pot very low heat, sauté the three chopped peppers, the garlic and
the big-headed onion and stir until they turn golden brown
Add the 3 cups of rice, the important thing is taster very well
Add the 5 cups of water, the chopped vegetables, the chicken breast, the chicken bouillon
cube, the seasoning envelope and salt to taste, stir and cook over medium heat for about
20 minutes or until the rice dries out
Once the rice has absorbed all the water, cover the pot and cook over low heat for
another 12 to 8 minutes until the rice is soft.
