INTRODUCTION

1.1 INTRODUCTION TO THE INDUSTRY
Utensils are mainly manufactured by small and medium enterprises spread across
various clusters in India and provide employment to sizeable workforce. These products are
of immense daily use in the household and hence there is a large market base in India with
more than 250 million households. Utensils are of many varieties and the most important of
them being Kitchen Utensils used for the preparation of meals. They are used for mixing,
cutting, shucking, and many other activities in the kitchen. From mixers and blenders to
spatulas and whisks, there are utensils for the preparation of every type of meal, and every
level of cooking. Kitchen utensils should have good cooking efficiency by the shape, size and
thickness of the utensil. The utensil should be appropriate for its intended use so that the kind
of heat used will be distributed evenly. This will ensure proper preparation of the food being
cooked at the proper temperature. Kitchen utensils should offer versatility for everyday use.
They should provide plenty of flexibility for preparing many types of meals. Durability and
reliability are the two most important features of utensils, as they will stand up to wear and
tear, and last a lifetime.
Before digging out on the ancient Indian cooking utensils, let us first get an idea of
the raw materials that were used to manufacture these olden days’ kitchen equipment. They
form the basis on which these utensils were being used. From a broader perspective, there
were mainly five categories that were used from ancient times in India.
Stones
These are generally used in grinding. As opposed to the stainless steel blades that are
used in the mixers, for grinding using sharp blades that are made out of stainless steel, the
usage of stone goes back to olden days of the kitchen. The taste of the ingredients, when
ground using ancient Indian cooking utensils manufactured by stones cannot be compared to
the others. This option along with its unique taste is healthier too.
Clay

Clay is used in many olden days’ kitchen equipment. Though clay is a bad conductor
of heat, it is not that it cannot pass heat through it at all. There is a slow and constant heat that
gets transferred to the whole cookware making it easy to heat uniformly. it takes a lot of time
to get heated as said earlier. They are also used to store food once they are cooked.
Ceramics
Ceramics, on the other hand, are in a way sophisticated clay for the fact that they are
baked to solidify. It is inert, as they do not react with any of the food ingredients forming
toxins. The ceramics picked should not be the one that is contaminated by adding poisonous
substances.
Metals
The utensils made using the metals are the most used materials. They are used in
many forms, each one for different purposes. As is there are several metals. Due to this fact,
there are vast forms of utensils that are carved out of these. We should be extra careful while
using metals, unlike the previously mentioned materials, as all the metals are not good when
it comes to cooking.
Copper
Copper is widely used for storing water other than heating, where only the portion
where fire touches the metal is made using copper. This is due to it being a great conductor of
electricity. It is very reactive with most food items, so it is better to confine it to store water.
Cast Iron
After a very long vacation, fortunately, cast iron is coming back to the Indian
kitchens. They are very good conductors of heat because of which they serve a great purpose
in transferring heat to the Kadais very efficiently, uniformly, saving fuel. The iron that is
heated makes the food items to absorb some amount, making us compulsorily consume them,
which acts as a bonus health benefit, Being careful about rust and some reactive acidic sour
items, we can make use of this for most of the dishes along with the health benefits that it
provides

Stainless Steel
They are universal, in the sense that without getting rust and not reactive to any kind
of food ingredients, irrespective of their taste, this can be used in cooking safely, but the
health benefit bonus of cast iron is not applicable here.
Bronze
Called as Kansa in most parts of the country, it is mostly used in East India for several
things, such a Plates ,Tumblers to drink water, Serving bowls to serve food.The advantages of
this metal being the health benefit of purifying the food served through it or eaten using this
metal plate.
Silver
Silver, being an expensive metal now, can be rarely seen in households. But back
then, silver was used in both kitchens and religious work. The best use case of silver is in the
plates. When eaten using silver plates they throw abundant health benefits, like:
Gold
When silver is hard to be kept in our routines, it is highly likely that gold can be
brought into our regular schedules. But if you can afford it, there is nothing like it. It is not
just a metal that looks beautiful, but a metal packed with high benefits.

two factories and about 63 persons working employees. We produce high quality aluminium
cooker in the market and has expanded the products distribution since 2001 in south part of
India. SRI DHANDAPANI ASSOCIATES has sold over 5 - 6.5 lakhs pressure cookers and
cookware. The company turnover is around 40-45 lakhs All DHANDAPANI cookers are
listed and testing products for public safety. From February 1, 2021, the Government of India
has made it mandatory to list all Pressure Cookers manufactured and sold in India with the
Bureau of Indian Standards, commonly known as ISI. Hence additionally, all Pressure
Cookers manufactured by us have certification of BIS and carry the ISI stamp mark too. Each
pressure cooker made by DHANDAPANI features an inside fitting lid. This design is
inherently safer than conventional pressure cookers. To open this cooker, you have to first
lower the lid slightly into the body of the cooker; and that cannot be done until the steam
pressure inside the cooker falls to a safe level. Thus these pressure cookers are pressure
locked.

How does a pressure cooker work?
A. High-pressure steam rapidly transfers heat to the surface of any food not submerged in
liquid.
B.A spring-loaded valve is normally open so that air can escape. As heating begins,
expanding vapour pushes this valve up, closing off the vent. (At very high pressures, it rises
farther and reopens the vent to release excess steam.)
The valve regulates the pressure inside the cooker to a present level typically 15 psi above
atmospheric pressure; this value is called the gauge pressure. At these elevated pressures,
water boils at 114 °C respectively. As soon as the cooker reaches the correct cooking
pressure, reduce the heat to avoid over-pressurizing it.
C. The sealing ring, typically a rubber gasket, prevents steam and air from escaping as they
expand. This causes the pressure in the vessel to build as the temperature rises. Any food
particles stuck in the seal can cause it to leak steam, so check and clean the gasket regularly.
D. The lid locks with a bayonet-style mechanism that pushes against the sides of the cooker.
Frequent over-pressurization can damage this mechanism and render the cooker useless.
Other designs use bolts that clamp around the outside.
E. The handle locks as well, to prevent the lid from opening while the contents are under
pressure.
F. There is too much liquid in this cooker. Generally, you should fill the pot no more than
two-thirds full.
G. Water vaporizes into steam, increasing the pressure inside the cooker as it heats. Because
the boiling point of water depends on pressure, it rises too, just enough to keep the water and
steam temperature hovering around the boiling point for the higher pressure. The pressure
continues to rise until it is stabilized
by the valve.

How Are Pressure Cookers Made?
Pressure cookers are some of the most convenient kitchen equipment available.
Pressure cookers are used to prepare food quickly and efficiently thanks to the power of
trapped steam pressure.
Pressure cookers are faster compared to most cooking methods whether boiling, braising or
steaming. The high-temperature environment that is created in a pressure cooker also helps
caramelization and browning to occur, which further gives you more variety in the types of
foods that can be prepared in a pressure cooker.
The increase in pressure consequently raises the boiling point of water, which drops the
cooking time considerably. All pressure cookers maintain the same mechanism for preparing
food. Despite this similarity, there are several notable differences in design and features
among various brands, models and manufacturers.

The pressure cooker lid is perhaps the most important component of the entire
pressure cooker. The lid is where all the safety mechanisms and systems are placed so it must
always be handled with caution and treated with care. The lid is where the pressure valves
and the sealing mechanisms are held.

The valve and pipe are where the steam comes through; before you attempt to use your
pressure cooker, you must make certain that the valve and pipe are free and clear of any food
blockage or residue.
Lids are designed differently depending on the brand in question. If you turn over the lid of
some pressure cookers, you might notice a small basket that is put there to prevent food from
reaching the pressure valve. Some brands also add a false ceiling to keep these critical
components of the pressure cooker safe and free from blockage.
The Base
The base of the cooker is where all the heating occurs because it is where the heating
elements are situated. The temperature sensor, as well as the programming panel, is also
located within the base. The temperature sensor is what helps to keep track of the temperature
of the system.
If the sensor detects excessive heat inside the pot, it will automatically shut itself off. The
programming panel consists of all the pre-set programs and buttons that are used for
operating the pressure cooker. Different models and manufacturers have differently designed
panels as well as some similar programs.
The inner pot of the pressure cooker is where the food is actually cooked. The pot can
be made from different materials including ceramic, stainless steel and aluminium. The inner
pot is usually removable and can only be filled to a maximum level for cooking to occur
properly and to prevent the safety mechanisms situated on the lid from spoiling.

PROCESS OF MANUFACTURE.
The pressure cooker consists of components like main body, lid, regulator, gasket,
fusible plug, handles, lugs etc. The main body and lid of the pressure cooker are
manufactured of aluminium alloy sheet/Circles of different thicknesses depending upon the
size and specifications of the Cooker.
The components i.e. pressure regulator, Bakelite Handles and Lugs, Rubber Gasket, Fusible
Plugs, Screws, Rivets, Packing Boxes etc. are usually purchased from outside sources by the
pressure cooker manufacturers.
In the manufacturing of pressure cookers operations like circle cutting, deep drawing of
body, drawing of lid, trimming of body and lid, notching of body, drilling of holes in body
and lid, fixing of lugs, handles, vent pipe, buffing and polishing, testing, packing etc. are
involved.
IS 2347:1995 for domestic pressure cooker and IS 1766:1994 for Rubber DOMESTIC
PRESSURE COOKERS 75 Gaskets for cookers and other relevant specifications prepared by
the BIS should be followed for quality control and various tests. The manufacturer should
have arrangement to carry out the important tests in the factory premises.

person cannot perform his activities. Raw materials are very important requirements of every

3.2 PRODUCTION DEPARTMENT
The first function is to establish standards in regard to the quality and the quantity of
the products being made. Typically, these standards are placed throughout the process, not
just at the beginning or end. The second function of the department is to work with the
purchasing department to ensure enough materials are on the production line and to ensure
replacement of any broken equipment. The purchasing department works with other
departments to make sure purchased equipment and materials are all stocked and available.
The next function is to work with the design and technical department to ensure the product is
built to the correct specifications and to place any new designs or changes to the product onto
the line. Finally, the production department collaborates with the works department to ensure
there is a proper workforce available to check the quality of the product and make any
necessary repairs to any equipment that breaks. The production department does not work
directly with the marketing department. However, it remains in contact with marketing to
ensure the products are attractive and desired by customers.
Excess or shortage in production will have adverse effects. Excess production of products
will leads to blockage of funds in inventory. Where as the shortage in production will create a
shortage of its products and will not be able to fulfil demand.

Production management ensures that quality products are manufactured by the

made to convert the needs of customers into production specification while designing a
product. Certain standards are set through production management process and attempts are

utilisation of available resources and reduction in cost of production.
Quality is near an accident it is always the result of high intention, sincere effort intelligent
direction and skillfull execution. Above all, quality means setting the highest standards for
their selves. In industrial context quality is defined in much more functional fashion thus we
can say that quality means Fitness.. It is also considered as the sum total of the attributes or
properties that describe the product. Today the existence of any manufacturing unit depends
on the quality of Product or services it manufactures or supplies. The image or goodwill of
any unit is closely related to the quality of product made or supplied by that unit.

product. Industry will have latest equipment for the checking of raw-materials and fished
product. So that Industry can maintain quality of their product and build image in the market.
Industry will first check finishing of cooker, then test whistle test and at last pressure. Quality
testing involves each step of the manufacturing process. Employees often begin with the

a. Bookkeeping
This is the most basic function of the finance department. It involves the day-to-day
recording, analysis and interpretation of a company’s financial transactions. This will include
the tracking of all expenses (purchases, payments etc.) and sales of finished products.
In some start-up companies, this role is often carried out by a bookkeeper who might be
replaced by more specialized payables and receivables clerks as the company grows or
expands its operations.

In my point of view i can honestly say that my time spent with the industry resulted
in one of the best learning in my college life. I gained practical knowledge and I also had the
opportunity to meet many people and they helped me to learn about the industry.
I was able to contribute to the company by assisting and working on projects throughout the
internship project. I was able to learn a lot from people, one important thing that I have
learned in the time of internship is management skills and self motivation.
When I started, I realized what I had to do to the company so i planned my days and worked
so that I was not overlapping or wasting my hours. Through this internship project I’ve
learned the importance of time management, self-motivation, quality speaks and that our life
needed in way of development.
