Research for IM 1-Chapter 2: Follow enterprise hygiene standards, procedures and

practices Research on the common good hygiene practices in the Philippine restaurants/ food
establishments and provide at least five of them (Please elaborate your answers and you may
share related personal experiences or observations.) (25 points).

1. JOLLIBEE
Apart from tightening its safety standards for food preparation and handling even further,
the Jollibee Group has also intensified its sanitation protocols by cleaning and sanitizing its
stores every 30 minutes, especially high-touch objects including doors, door handles, and
fixtures.

Personal observation: I observed that even the table and chair they sanitized it so well. Before
and after using it.

2. MCDO
Restaurant food safety and quality management procedures are integrated into the McDonald’s
Operations and Training Program and based on Hazard Analysis and Critical Control Point
principles.
Personal observation: based on my observation in mcdo, crew members receive training on food
safety during the onboarding process and they also wearing a hairnet for the protecting the food of
customers. Webinars are held to train the our market food safety and quality leads on the most up-
to-date food safety, hygiene and sanitation standards.

3. MANG INASAL
Store crew sanitize the door and door handles every 30 minutes even as they pursue intensified
cleaning and sanitation of fixtures and facilities. Similarly, heightened safety protocols for food
preparation and handling—on top of existing procedures that are already thorough—are also
being implemented. These include the crew wearing face mask, face shield, and gloves;
handwashing and sanitation every hour and when necessary; and the appointment of a Hygiene
Ambassador – a crew member wearing an identifying button pin and personal protective
equipment and who go around reminding crew and diners of the safety measures. The Hygiene
Ambassador himself cleans and disinfects the tables after every use.

Personal observation:
I observed that hygiene is properly observed here. Also for customers, there is a sink for hand
washing purposes. I also observe that all store crew wearing a mask to secure safeties to other
crew and customers.

4. KFC
KFC chicken is delivered and cooked fresh each day. KFC operates under the Food Act (2014)
and has strict Brand Standards in place to assure product quality. Staff are trained in food
preparation and cooking, and adhere to process and procedures in-store. Chicken is cooked and
held in a heated cabinet in accordance with the Food Act, at a minimum temperature of 60oC.
After purchasing product(s) from store, we urge customers to consume product(s) immediately,
especially during the warmer months, or cover and refrigerate accordingly.

Personal observation:

I observed that kfc chicken is well cooked and also the restroom and washing room is also clean.

5. Starbucks
Safety Measures In-Stores
Starbucks continue to put safety and health as top priority for our partners (employees) and
customers. As such, we continue to implement the following virus containment measures within
our stores.
1. Safety First.
To ensure safety, foot bath use is required prior to entry.
2. Temperature check for all.
Prior to entering the store, temperature check will be conducted. Anybody found with
37.5 temperature will not be allowed entry.
3. Hand Sanitation.
After temperature has been checked, hand sanitation is also required.
4. Wear a face mask.
We ask you to kindly keep your mask on while inside our store.
5. Physical Distancing. 
The store has floor guides to ensure ample distance is kept from each customer in line.
6. Keep a safe distance.
Customers will be asked to wait at designated spots until their name is called out by the
barista.
7. Cashless Transaction is encouraged.
To minimize contact, use of e-wallets (Starbucks Card and Mobile App, Credit/Debit
Cards) are highly encouraged.
8. Enhanced Sanitation.
The partners (employees) strictly follow increased sanitation and proper hygiene
protocols.

10. Only disposable take-out ware will be provided.
The use of personal cups or tumblers and "For Here" ware is on hold.
Personal observation:
I observed that they heightened their cleanliness this pandemic thus providing great cleanliness
and sanitation.
