B. PRESENTATION

Food Service Operation encompasses any food service establishment that creates and
serves food and beverages for its customers.

A restaurant is a commercial establishment that prepares, offers, and serves food and drinks
to patrons, normally done within the restaurant premise in the dining area, and sometimes
through take-out and food delivery services.

Types of Commercial Foodservice Operations

1. Cafeterias are restaurants serving ready to eat food


arranged and displayed behind a food-serving counter. A
patron takes a tray and pushes it along a track while
choosing food items in front of the counter.

2. Bars offer liquors and other alcoholic drinks through


personalized service. Bars should secure proper licenses
to follow strict laws on closing time, serving underage
customers etc.

3. Cafes is a French term that means ‘coffee’. These are


casual restaurants which were originally introduced and
opened in France in response to the growing popularity of
serving coffee and tea among Coffeehouses in London.

4. Casual Dining Restaurants typically provide


personalized or table service for moderately priced food in
a casual atmosphere. Their target customers are those
who comprise the niche market between fast food and fine
dining restaurants.
5. Food Bars include informal snack bars, milk tea bars,
kiosks, dessert stand, and theatre counters. These food
bars have refrigerated or heated display glass counters
(based on their food offerings) and a bar at which
customers eat their food orders.
6. Coffee Shop
It is a borrowed concept from the United States referring
to small informal restaurants. It is eminent by its self-
service, quick service of drinks and pre- plated simple
meals from the kitchen.

7. Specialty Restaurants range from quick and self-


service establishments to upscale restaurants with
personalized service. They offer ethnic cuisines and other
authentic cultural foods such as Filipino cuisine, Chinese
cuisine, Indian cuisine, American cuisine etc

8. Food courts are dedicated places for eating inside


shopping malls where fast-food outlets and specialty food
establishments that are operational in booths can be
found.
9. Fine Dining Restaurants offer patrons the very best in
food, service, and atmosphere. They are also the most
expensive type of restaurants one can operate and
maintain.

10. Drive-thru instructs the customer to drive through


assigned lane, enters the first window to give the order,
and then paying the second window, proceed to the third
window to take meal, then, drive off. Drive through
provide customers with quick service from the comfort of
their cars.
11. Fast-Food Restaurants highlight the speed of service
and affordable food offerings. Various fast-food outlets
have the following characteristics.
1. Guest orders food at the counter, pays for it, and wait
for his orders to be assembled in front of him.
2. Guest takes the trays where his orders are placed and
carries the tray to his table.
