Preliminary

1.1 Background
Apple vinegar or apple vinegar is a natural fermented health drink from
pure apples (Jarvis 1958). Fermentation in the manufacture of apple cider
vinegar takes place in two stages namely the first fermentation which is
carried out by yeast fermentation, namely Saccharomyces cerevisiae which
remodel sugar into alcohol. The second fermentation is fermentation carried
out by acetic acid bacteria namely Acetobacter which remodel alcohol into
acetic acid. The manufacture of apple vinegar traditionally takes place by
spontaneous fermentation. Microbes that play a role in spontaneous
fermentation come from the skin of the fruit, the tools used, and the
environmental conditions of the fermentation. Spontaneous fermentation has
its disadvantages, namely unstable fermentation results such as non-
spontaneous fermentation both in quality and quantity such as standard pH,
amount of alcohol, total acid and taste and aroma. Efforts to overcome the
results of apple cider vinegar that meets the quality criteria is to do non-
spontaneous fermentation using a microbial starter that plays a role in the
fermentation process . The sensory characteristics of apple vinegar depend
very much on the culture used in the fermentation process and the
fermentation techniques used (Downing, 1989). The culture used in the
process of apple vinegar fermentation is the yeast of Saccharomyces
cerevisiae which breaks down sugar into alcohol and the bacteria Acetobacter
aceti which breaks down alcohol into acetic acid.

2.1 Definition of apple vinegar


Apple vinegar is a drink made by pulverizing apple and squeeze the
liquid. After the apple liquid is obtained, later bacteria and yeast will be
added to begin the fermentation process alcohol. In addition to yeast, in
the second fermentation process, alcohol is converted to vinegar by acetic
acid-forming bacteria (acetobacter). Vinegar obtained from a long
fermentation process this also leaves components like acetic acid, gallic
acid, catechins, and others. This makes the vinegar have benefits as an
antioxidant as well as an antibacterial. Nowadays vinegar, especiall vengar
apples, began to be re-untilized by the community and consumed to
maintain a helthy body. Even apple vinegar is reportedly able help treat
diseases.

2.2 The benefits of apple cider vinegar for health?


Generally, there are several benefits of apple cider vinegar that are
widely targeted society to get the benefits. Hete goes the six benefits apple

1. Help you lose weight
One of the many trusted benefits pf apple cider vinegar is help you
lose weight. Reporting from webMD, Debbie, Davis, RD, a nutritionst
stated that apple vinegar might have an effect on weight loss. A research

University has been studying apple cider vinegar for more than 10 years.
Reported by WebMD, Carol stated that apple vinegar has an antiglycemic
effect. That is, apple vinegar can inhibit the absorption of carbohydrates so
that blood sugar does not increase dramatically after eating. Even so, the
focus on overall healthy eating remains to be done if you have diabetes.
The experts do not recommend to stop taking diabetes medications and
then replaced with apple vinegar. You still need to consult a doctor first.

3. Overcoming gastric acid constipation and other digestive disorders.


According to Carol Johnston, because of its limiting absorption of
carbohydrates, some undigested carbohydrates and starches will then
become food for good bacteria found in the digestive system. We are
advised to consume apple cider vinegar which has not yet undergone the

antibiotic properties that can destroy E.coli bacteria and also Salmonella.
This bacterium is a major cause of diarrhea and food poisoning. Because

infections. Some research evidence also shows that apple vinegar can slow
down the digestive process so that it allows time for the feces to harden
before being removed. Raw, organic, and unfiltered apple cider vinegar is

medicine. Usually, this type of apple vinegar is turbid and there are fine
fibers in it. Although there is research which states that this material is
quite effective, further research is still needed. Because the apple vinegar
through a fermentation process that produces acetic acid. It is this acetic
acid which in some people can actually cause stomach pain, heartburn, and
even worsen diarrhea.

main impotence drug. Anyone who wants to use apple cider vinegar as a
natural treatment must be wise and cautious. You should consult this

and is not emptied at the usual speed.
2. Indigestion Because of its acidity, this vinegar can worsen an ulcer's
condition or cause people to become nauseous. Drinking apple cider
vinegar directly causes a sore throat because of its acidity. Fortunately, this
is a rare side effect. Therefore, people who are experiencing indigestion or
have difficulty swallowing are not advised to use this apple vinegar.
3. Tooth problems Acidic foods and drinks have been shown to damage
tooth enamel. Tooth enamel that is continuously eroded can cause further
damage such as cavities. Moreover, apple vinegar which is not dissolved,
this can damage teeth when consumed directly. In addition, in high
amounts and long periods, apple cider vinegar can have a yellowish color
effect on teeth and make teeth sensitive.
4. Esophagus feels sore Apple vinegar has the potential to cause esophagus
injury if consumed too much. According to nutritionist Katherine
Zeratsky, irritation of the esophagus is the most likely side effect of apple
cider vinegar, especially with long-term use. Therefore, mix the vinegar
with water which can help prevent the esophageal wall from sticking
directly with concentrated vinegar extract.
5. Reducing blood sugar levels Reported in Medscape General Medicine,
most consumption of vinegar can reduce body blood sugar levels because
of its antiglycemic effect. In some cases, this can cause hypoglycemia
(lack of blood sugar), reduce the supply of blood sugar to the brain, faint,
even coma. Because too much can be fatal, diabetics should consult their
doctor before consuming apple cider vinegar
If you want to eat apple vinegar, the most important thing to consider is
how to drink it. You are strongly discouraged from drinking apple cider
vinegar without first dissolving it in water. Because of its acidic nature, if

not mixed with water, apple vinegar can actually hurt the throat. Besides
the acidic nature is also dangerous for dental health because it can erode
the tooth enamel layer, this will cause teeth to easily become porous.

tablespoon of apple vinegar, mix it with 10 tablespoons of water.
Consumption of apple vinegar at least 1 to 2 tablespoons per day. There
are no specific rules when we are required to consume apple vinegar, but
some people usually drink apple vinegar in the morning or before and after
eating. Do not forget to rinse your mouth with water after drinking apple
cider vinegar to remove acid in the mouth so that it does not damage the
teeth. Be sure to consult with your doctor before using apple cider vinegar
in your daily diet. Do not immediately make apple cider vinegar as a
substitute for drugs if you take certain medications. Remember that a
healthy lifestyle has the biggest role in maintaining our health.

2.4 Procedures for consuming apple vinegar


1. Limit your intake of apple cider vinegar. Start small doses gradually. A
maximum of 2 tablespoons (30ml) per day or depending on the tolerance
of each body.
2. Use a straw when drinking so that it does not directly hit the teeth.
3. Rinse mouth. After consuming a drink containing apple cider vinegar,
rinse your mouth. Or to prevent further damage to the enamel, brush your
teeth after 30 minutes of consuming apple vinegar solution.
4. Avoid apple cider vinegar if you have gastroparesis, or limit it to no
more than one teaspoon (5 ml) a day.

3.1 Conclusion
Basically, the effort to use apples into apple cider vinegar is an climatic
fruit that has a short shelf life and is suitable for consumption in fresh
conditions. This gives an opportunity for apples to be processed into apple
cider vinegar with the aim of diversification of processed apples that can
maintain the content of phenolic compounds that are useful as antioxidants.
Bioactive components such as minerals and antioxidants found in apples
provide benefits for the body to prevent oxidative stress (Heo and Lee, 2004).
The establishment of an apple cider vinegar processing plant needs to be done
with consideration that apple cider vinegar has a favorable prospect to be
developed into a large industry because it is useful as a functional beverage
and the price of raw materials is cheap and easily obtained. Regular
consumption of apple cider vinegar can prevent the risk of cancer, heart
disease, asthma, type two diabetes and can improve gastric function and lose
weight (Liu and Boyer, 2004).

3.2 Suggestion
Apple vinegar used must be of best quality and with the correct use for
best result.
