Malu – Lollipop

(Heinrich Cirunay)

Ingredients:
 Chicken Wings 25 pcs.
 Calamansi Juice ½ cup
 Ground Pepper 1 Tbsp.
 Garlic, minced 2 Tbsps.
 Iodized Salt 6 Tbsps.
 Bread Crumbs 4 cups
 Malunggay powder 2 Tbsps.
 Eggs 7 pcs.
 Cooking Oil 2 cups.

Procedure:
 First, divide the chicken wings into halves at the
joint.
 From the joint, strip down the chicken meat
without removing from the bone and form into
lollipop; do the same for the smaller bone.
 Second, marinate in calamansi juice, ground
pepper, garlic and salt for at least 2 hours or
overnight.
 Next, simmer for 2 minutes in marinating
solution.
 Mix bread crumbs and mulunggay powder, add
salt to taste.
 Then, dip chicken in beaten eggs and roll in the
breading mixture.
 Finally, deep fry until golden brown. Serve hot.
