Mapro is first established in 1959 by shri Kishor Vohra Mapro in Panchgani

Mapro is a leading innovator of processed fruit in western India. It is the leading processor of
strawberry in India and our products include jams, squash, crush and jellies.

Over 40 years ago in small town panchgani, near mahabaleshwar,a business man named
Kishor Vora decided to make some strawberry jam. Today his hobby has borne fruit in the
shape of Mapro once of the most modern, hygienic,quality-oncious jam and fruit processing
manufacturing corner in western India.

Mr kishor vora have rested easy on success of his fruit recipe. But he wanted to develop
innovative ideas such as vegetarian jelly sweet and fruit cube with fruits juice.

At the present in headed by shri mayor .j. vora is managing director of the company.mr
mayor vora is transforming the mapro from last 20 years and enhanced the dream and
business or kishor vora and the vora’s has given a hill station a new name by transforming
the famous hill station of Maharashtra, mahabaleshwar into food processing zone of the
Nation

( Mahabaleshwar ) a panoramic and beautiful hill station of western India. It is in the fruit
processing business over mote then 40 years and it is known for quality and innovation in the
industry. The brand Mapro is well recognized brand in India.

The company has shown organic growth over last four decades representing sound financial
with sustained profitability. Set up as a family business over 40 years ago, it has earned a
name for quality and consistency .Mapro products enjoy Premium Status in the Indian

RAW MATERIALS:-
Jams and jellies are made from a variety of fruits either singly or in combination. Most of the
fruits are harvested in fall .The level of ripeness varies. Pears, peaches, apricots, strawberries,
and raspberries gel best if picked slightly under ripe .The fruit is purchased from
farmers .Most jam and jelly producers develop close relationship with their growers in order
to ensure quality. The production plants are built close to the fruit farms so that the time
elapsed between harvest and preparation is between 12-24 hours.

Sugar or high fructose corn syrup or a combination of the two are added to the fruit to
sweeten it .Cane sugar chips are the ideal type of sugar used for preserving fruits.Granulated
and beet sugar tend to crystallize.sugar os purchased from an outside supplier.High fructose
corn syrup is processed by fermenting cornstarch.it is purchased from other supplier.

The element that allows fruit to gel,pectin is present in varying degrees in all
fruit.Apples,blackberries,cherries,citrus fruits ,grapes,quinces and cranberries have the best
natural gelling properties .Strawerries and apricots are low in pectin , or extra sugar is added
to mixture .sometimes pectin is extracted industrially from dried apples .

Citric acid is added to obtain the correct balance needed to produce the jam or jelly . Lime
and lemon juie are high in citri acid can also be obtained by the fermentation of sugars . it is
purchased from outside suppliers

Other flavouring ,such as vanilla , innamon , mint ,alcoholic beverages such as rum or Kirsch
, can be added to the jam or jelly . these flovourings are purchased from outside suppliers.

MANUFACTURING PROCESS:
The process given below is mainly for jams and jellies. Theere is not much difference in the
production process of crushes,and syrups,etc.

The ingredients must be added in carefully measured amount ideally, they should be
combined in the following manner:

1%pectin

65%sugar

And an acid concentration of PH 3.1 to much pectin will make the spread to hard too much
sugar will make it too sticky.

1) INSPECTION:-

When the fruits arrives at the plant, it is inspected for the quality, using color, ripness,and as
guides. Fruit that passes inspection is loaded into a funnel-shaped hopper that carries the fruit
into pipes for cleaning and crushing.

CLEANING CRUSHING AND CHOPPING;


As the fruits travel through the pipes gentle water spray clears away surface dirt. Depending
on whether the finished products is to be jam jelly crush or syrups paddles push the fruit its
juice through hole, leaving steam and any other excess debris behind.some fruits, such as
citrus and apples may be manully peeled, cored, slied, and diced. Cheeries may be soaked
and then pitted before being crushed.

PASTEURIZIG THE FRUITS;-


The fruit and juice continues through another set of pipes to cooking vats.Here it heated to be
just boiling point (212* F[100* C]) and then immediately chilled to just below freezing (32* F
[0* C]) This process, pasteurization,prevents spoilage.for jellythe pulp is forced through another
set of small opening that holds back seeds and skin . it will often than be passed through a juicers
or filters. The juices or fruit is transferred to large refrigater tanks and then pumped to cooking
kettles as needed.
COOKING THE JAM AND CRUSH:
Premeasured amount of fruits and juices, sugar and pectin are blended in industry cooking
kettle. The mixtures are usually cooked and cooled three times. If additional flovarings are to
be include they are added at this point. When the mixture reches the predetermined thickness
and sweetness,it is pumped to filling machine.

FILLING THE JARS AND BOTTLES:


Pre- sterilized jars move along a conveyer belts as spouts positions above pour premeasured
amount of jam and crush into then .Metal are then vacuumed sealed on top.The process of
filling the jar and vacuum packing them forces all of the air out of the jar further insuring the
sterility of the products.

LABELLING AND PACKAGING:


The sealed jars are conveyed to a machine that affixes preprinted labels. According to law,
these lables must list truthful and specific information about the contents. The jars are then
packed in the cartoons for shipment. Depending on the size of the products, operation,
labeling and packaging is either achieved mechanically manually.
PRODUCT INFORMATION:
Mapro produces a number of items ranging from jams, jellies, chrush, syrups, etc. Their
leading product rose syrup, from rose petals and their extracts. The manufacturing process
for most of their products is similar only the type of fruits bases on variations in cooking
temperature and pectin ratio.

Even the main road of this area is having hoarding and counters

But the taste and nutritious value and uniqueness result in increasing seal.
OBSERVATION (WHAT WE SAW)
The manufacturing units at panchgani are located place which are very close to raw material
producers.

Most of the process in the unit is automated.

Sterilization of bottles was also taking place

There was a lot of free space in industry

Some of the products which are produced at industry are kept at counter for sell

There was store of mapro products in factory premises


CONCLUSION
It is easy for manufacturing unit to get a regular and steady supply of inputs.

The over all process is completed in a matter of minutes. There is a good blend of human and
machine resources. At no point of production is there wastage of time

The bottle sterilization with the help of machine helps in saving a lot of time and energy.
