MISSISSIPPI MUD CAKE

"This is a gooey and chocolaty dream. It's very moist. It's a great dessert for potlucks,
dinner parties, etc. Make sure you get a piece though because it will disappear quickly!
I got the recipe from the Southern Living 30 Years of our best cooking book. It's a
great cook book!"

DIRECTIONS INGREDIENTS
1. Preheat oven to 350°F. CAKE
2. Lightly grease a 9x13 inch pan. 1 cup butter
3. Melt the butter in a medium saucepan. 1⁄ cup cocoa

4. Add the cocoa and stir. 2 cups sugar


5. Remove from the heat. 4 large eggs, slightly beaten
6. Pour butter mixture into a mixing bowl 1 1⁄2 cups all-purpose flour
and add sugar and eggs. 1 dash salt
7. Mix until blended. 1 teaspoon vanilla extract
8. Add the vanilla. 1 1⁄2 cups pecans (optional)
9. Mix in the flour and salt. 4 cups mini marshmallows
10. Stir in the pecans.
11. Put batter into prepared pan and cook
for 35 minutes or until done. CHOCOLATE FROSTING
12. Remove from oven and sprinkle with (16 ounce) package powdered sugar,

marshmallows. sifted
13. Cool in the pan on a wire rack. 1⁄ cup milk

14. For the frosting: Combine all of the 1⁄ cup cocoa

ingredients and mix until smooth. 1⁄ cup softened butter

Spread frosting on cooled cake.
15. If your frosting is too thick, add more
milk.
