Chapter 1

INTRODUCTION

Background of the study

Many plants have infiltrated our lives but, few have done so

as gracefully as the calabash. Calabash is the Filipino name for

the tree but mostly call it Miracle fruit for it provide numerous

health benefits and cures some diseases even cancer. Local

communities used calabash as remedy for several illnesses,

because of its many uses in folkloric healing. Although some

local communities use it and let it grown in their backyard, it

is not commonly used, as a result, it is frequently underutilized

and left on the ground during harvest. Calabash fruit

(CrescentiaCujete), also known as miracle fruit, is compacted

with an ample amount of nutrients such as Vitamin B, Vitamin C,

calcium, iron, sodium and potassium. It is known beneficial for

aiding numerous illnesses such as decreasing blood pressure and

sugar level, controlling the growth of malignant cells,

efficiently dealing with respiratory problems such as asthma and

cough and prevent cancer cells in the human body (Tacio, 2015).

Ice cream is a frozen dairy food made by freezing a

pasteurized mix with agitation to incorporate air and to ensure

uniformity of consistency. This mix is composed of a combination

of milk products, sugar, dextrose, corn syrup in dry or liquid

form, water, and may include egg products, harmless flavorings

and added stabilizer or emulsifier (Arbuckle, 2013).

Since Filipino traditionally fun of eating ice cream during

all occasions and even in snacks and as their desserts, the

researcher decides to discover the level of acceptability of

calabash ice cream for those consumers who seek unique taste of

product. Maximizingthe use of this fruit by avoiding food

wastethat could beneficial to the calabash growers and consumers.

Objectives of the study

Specifically, this study will be conducted to, determine the

acceptability Calabash Ice Cream.

Significance of the Study

The findings of this study may be beneficial to the following:

Calabash Growers. The result of the study will help the

growers to prevent food waste out of calabash fruit.

Community.The result of the study will support the

livelihood of local vendors by utilizing this new product.

HM/HRM Faculty.The study's findings will be useful to the

Guimaras State College faculty, particularly those in the

Hospitality Management Department, who will play an important

role in encouraging students to further enhance and improve this

discovery.

HM/HRM Students.The study's findings may help HM students

develop new product filling out of Calabash

Future Researchers.The latest results could be used by

future researchers who want to conduct experimental research made

of Calabash fruit.

Scope of Limitation of the Study

The study will be conducted to determine the acceptability

of calabash as ice cream. This will be conducted on March 2022 at

GSC Main Campus during the second semester of A.Y 2022-2023 as a

continuation due to the ongoing pandemic.

This will be evaluated by the randomly selected faculty and

staff of Guimaras State College Main Campus. The study will

employ experimental method specifically, Completely Randomized

Design (CRD) with three treatments replicated three times. The

modified Sensory Evaluation Sheet scale base on the nine-point

Hedonic scale will be used to collect the data. Mean, standard

deviation, and One-way ANOVA set at .05 alpha will be use in the

analysis of the obtained data.

For purpose of clarity and precision the following terms in

the study are define conceptually and operationally.

Acceptability.Rrefers to determining how well an

intervention will be received by the target population and the

extent to which the new intervention or its might meet the needs

of the target population and organizational setting (Guadalupe

et.al.2011).As used in the study, acceptability refers to how

much the respondents like the “Calabash Ice Cream”.

Calabash Tree.Scientifically known as CrescentiaCujete has

been used by local communities as remedy for several illnesses.

Because of its many uses in folkloric healing, Calabash tree is

considered as miracle tree of General Santos City (DOST- PCHRD

ISO 9001: 2015 certified). As used in the study, Calabash refers

to be the main ingredient to produce a new flavor of ice cream.

Ice Cream. A mixture of milk, cream, sugar, and sometimes

other ingredients that has been frozen into a soft, creamy

delight using special techniques (Moncel 2022).As used in the

study, ice cream refers to the product made out of calabash.

The calabash (CrescentiaCujete,) has had a complex

domestication history over past 20 years. Archaeologists have

found pieces of calabash dating back 11,000 in East Asia. In the

New World, people were using calabashes at least 10,000 years

ago. However, recent DNA research suggests that it was

domesticated three times: in Asia, at least 10,000 years ago; in

Central America, about 10,000 years ago; and in Africa, about

4,000 years ago. In addition, dispersal throughout Polynesia is a

key part of evidence supporting the possible Polynesian discovery

of the New World, circa 1000 AD.

The Calabash tree of the family Bignoniaceae that grows in

parts of Africa, Central and South America, the West Indies, and

extreme southern Florida. It is often grown as an ornamental;

however, it is also used in traditional systems of medicine. The

tree produces large spherical fruits (Britannica, 2018).

Botanically, Crescentia and that it is “a genus of six

species of flowering plants in the family Bignoniaceae, in

scientific name: it is called CrescentiaCujete. Referred to as

"miracle fruit." Another is Synsepalumdulcificumcujete

L. Katakataka (Bryophyllumpinnatum) is referred to as "miracle

plant, “Krabasi, kalebas, huingo are some of the common names of

calabash tree. Ethnic names: jicara (Spanish), luch in Maya.

In other part of the world Cujete is known by different

names: calabacero in(Spain), Totumo in (Colombia and Panama),

mate in (Ecuador), pate in (Peru), Jicaro in (Mexico), Higuera in

(Puerto Rico), and rum tree in (Sri Lanka).But most Filipinos

call it miracle fruit (Tacio, 2015).

Health Benefits of Calabash Tree

Calabash fruit (Cresentiacujete), also known as miracle

fruit, is compacted with an ample amount of nutrients such as

Vitamin B, Vitamin C, calcium, iron, sodium and potassium. It is

known beneficial for aiding numerous illnesses such as decreasing

blood pressure and sugar level, controlling the growth of

malignant cells, efficiently dealing with respiratory problems

such as asthma and cough and prevent cancer cells in the human

body (Tacio, 2015).

The calabash is also believed to help with intestinal

irregularities, diarrhea, menstrual pain, and pneumonia. The

bark can be used to clean wounds. (Teague, 2021)

Its fruit is used in treating respiratory illnesses like

colds, cough,asthma, and bronchitis. Calabash fruit is also

believe to have laxative, anti-inflammatory and hypoglycaemic

(blood-sugar lowering) effects. Because of its many (believed

medicinal) uses, calabash fruit is regarded as miracle fruit in

Southern Philippines.(Agron, 2013)

Vitamin C

The calabash fruit has a range of health benefits and is

known as the miracle fruit. It is especially high in vitamin

C, making it a popular remedy for treating colds.(Teague,

2021)

Growth and development

Calabash Grow from the seeds inside the fruit. The shell of

the fruit is surrounded by pulp in which the brown seeds are

located. Calabash tree should be grown in full sun on any Well-

drained soil. The main limbs on Calabash originate close to the

Ground forming a low-branched tree without training or pruning.

These limbs branch infrequently, forming a heavy, awkward-looking

canopy. This is suitable for Planting in an open area where there

is plenty of Space. Prune the tips of the branches regularly when

the tree is young to develop more secondary branches Close to the

trunk. This will help increase the Diameter of the main branches

and thicken the canopy. The trunk can be trained straight by

staking, and Lateral branches directed to grow upright.

Propagation is by seed. It is a small evergreen tropical tree

which can grow up to a height of 25 feet with broad, irregular

crown composed of long, spreading branches clothes in dark green

leaves.

After about 2-3 from the plantation, by noon of the

following day, the flowers wilt and die. The calabash tree

flowers are pollinated by bats during the night. In time, the

trees produce the round fruit. These large fruits take six months

to ripen. Calabash is most outstanding in the landscape for its

year-round production of flowers and fruit. The fruit features

circle that never fails to catch attention for it looks like a

coconut with smooth, hard shell which hang directly beneath the

branches. Internally, its flesh was white, moist and soft and

when bring to boil the flesh turns black. The fruits take six

months to ripen.

How to Plant

Fill your pot with the given growing medium and level the

surface. Wet the soil with water to provide the right environment

for your calabash stem germinate. Plant the stem cutting for

about 1-2 inches deep and set aside. Keep the soil moist by

spraying water every day. The calabash tree, whether a seedling

or a mature specimen, cannot tolerate drought. A calabash tree

can only be planted in areas without frost. The tree cannot

tolerate even the lightest frost.

Germination

The roots should emerge within 1-2 months.

Water Requirements

Calabash need plenty of water to grow, and that's especially

true during dry and hot periods. Young plants need more watering

than established plants. It's best to do several light

watering’s, in the beginning, to help the roots grow and

establish. Give your plants 1 inch of water per week.

Transplanting and plant Growth

Once the plants have their roots and stable it’s time to

transplant them to an open space.

Before transplanting them, make sure that the roots or the

plant is stable enough. Be careful not to cut its roots.

After making sure that the plant is stable bring it on the

open space and dig for 18-24 inches deep. Calabash could plant at

any type of soil, just add organic manure making the soil rich

and can give you high-quality fruit.

Related Studies and Relevance to the cited literature

Calabash Mocktail

The fresh calabash fruit has its tastes like Guyabano and

has a mixture of sweet and sour taste, but when boiled, it tastes

bitter like wine. The primary purpose of this study was to

develop a mock tail using calabash (CrescentiaCujete) extract as

a base with the juices: guyabano, pomelo, as jack fruit as

modifiers and honey as the sweetener. The study utilized the

experimental research design using researcher-made questionnaire.

There were 30 randomly selected participants who participated in

the study from a University. One-way ANOVA and the weighted mean

were used as a statistical treatment. It was found out that the

most acceptable optimum ratio in developing a mock tail using

calabash extract as the base was to make use of 60 ml calabash

extract, 30 ml Guaynabo juice, and 15 ml honey (mock tail 1); 50

ml calabash extract, 30 ml pomelo juice, and 15 ml honey (mock

tail 2); and 45 ml calabash extract, 30 ml jack fruit juice, and

15 ml honey (mock tail 3). For mock tail 3, lot 1 was found out

to be the most expensive formulation of P25.80 that contains 60

ml of calabash extract and 30 ml of jack fruit juice while for

mock tail 1 lot 1 was the cheapest formulation of P21.76 that

contains 60 ml of calabash extract and 30 ml Guaynabo juice. The

theoretical nutritional values of the Sucrose; 25.09 g Fructose;

18.24 g Galactose; 7.88 mg Iron; and 59.77 mg Sodium. The most

acceptable mock tail with regards to appearance for mock tail 1

was lot 1. For mock tail 2, lot 2 was the most acceptable with

regards to aroma and taste. Further, there was no significant

difference between and among calabash (CrescentiaCujete) mock

tail and commercial mock tail regarding appearance, aroma, and

taste. In developing calabash mock tail, it is ideal to make use

of 50 ml of calabash extract, 30 ml of pomelo juice, and 10 ml of

honey as the sweetener.(Yamamoto et al . , 2016,)

Calabash Juice Drink

In the study of Carnicer et al., 2020, the Development and

Evaluation of Calabash Fruit, researchersdeveloped a fruit juice

drink made up of calabash fruit (CrescentiaCujete) and evaluate

its acceptability. Survey questionnaire was deployed to 120

respondents using random sampling. Results revealed that the

calabash fruit juice is generally acceptable with a mean of 3.42.

The fruit juice was believed as a potential product in the

market. As to the conclusion,the researchers found out that the

Calabash Fruit (CrescentiaCujete) Juice Drink is brown, has

moderately odor, slightly low viscosity and slightly sweet.

(Carnicer et al., 2020)

Recommending that another product might be developed using

calabash fruit for future study.

Toxicity

The Calabash (CrescentiaCujete) is popularly known as

miracle fruit in Mindanao. It has been reported the fruit

contains a toxic compound called tetracyclic triterpenoid

cucurbitacin, which can trigger stomach ulcer. Pregnant women

must also avoid consuming it as the fruit was once used to induce

labor. Young fruit is occasionally pickled but the pulp is

poisonous. The seeds are poisonous as well if consumed raw.(Tacio

2015)

Chapter 3

Methodology

Purpose of the study and Research Design

This study aims to determine the acceptability of calabash

ice cream. The experimental research design specifically,

completely randomized design (CRD) will be employed to this

study.

According to Jayarama K.(1999), a completely randomized design

(CRD) is one where the treatments are assigned completely at

random so that each experimental unit has the same chance of

receiving any one treatment.

Method

Panel of Evaluators. This study will be conducted on March, 2022

and will be evaluated by the randomly selected faculty and staff

of Guimaras State College Main Campus.

Data-gathering Instrument. To determine the acceptability of

Calabash Ice Cream, the researcher adapted a Sensory Evaluation

Sheet based on the nine-point Hedonic Scale. The sensory

characteristics of the product were given scores 1-9 with 9 as

the highest and 1 as the lowest.

To interpret the data, the following scales and their

corresponding interpretation will be used:

Procedure: The study will be divided into two phases: Phase

I, Standardization of Recipe and Phase II, Sensory Evaluation of

the Final Product.

Phase I. Standardization of the Recipe. The recipe will

undergo standardization process from developing, tasting,

adjusting and retesting of the product. This will be done to

ensure that the production of calabash ice cream will be

consistent in terms of general acceptability. The ingredients

will be prepared according to the basic steps stated in the

recipe. The quantity of each ingredients will be measured

accurately. The entire test made and steps in the preparation

will be recorded.

Procedures:

Ice cream making

1. In a mixing bowl put the chilled heavy cream, then beat using

electric mixer until it sizes double.

2. Then, add chilled condensed and mix.

3. Add the main ingredient and mix it until it combines.

4. Transfer on the container and freeze.

The tool/ equipment/ materials that will be used in the

study are: can opener, Mixing Bowl, electric mixer, measuring

cups, spoon, refrigerator/ freezer, plastic containers. The

individual functions are indicated in the table below.

Phase II. The sensory evaluation of the final product.

(Include the manner were you observe health, and safety

procedures due to COVID-19) The 30 randomly selected faculty and

staff of Guimaras State College- Main campus will be invited as

panel of Evaluators to evaluate the acceptability of Calabash Ice

Cream. The score sheet and the finished product will be

distributed to the panel of Evaluators who tasted the particular

treatment and rated the sensory characteristics using the 9-

point Hedonic Scale. The score sheet will be gathered after the

evaluation.

Data Analysis Procedure

The data gathering will be subjected to the following

statistical tools:

Mean. Mean will be used to determine the acceptability of

Calabash Ice Cream

Standard Deviation. Standard deviation will be utilized to

determining the homogeneity and heterogeneity of the scores.

One-way analysis of variance(ANNOVA). The one-way ANNOVA

will be employed to determine the significant differences among

characteristics of the three treatments and Replication. The

level of significance will be set as 0.5 alpha.
