This brand and this company were created by a small group of friends with
the aim of allowing people to discover and to put forward the virtues of
Stevia, which is also called “the Agricultural wealth” (green gold) and to
bring to its consumers products of natural origin that come up to expecta-
tions of well-being, equilibrium and good taste.
The Stevia and its culture

This plant is native to South America and the high plateaus of Amambay,
bordering the region of Brazil situated in east Paraguay and was used for
centuries by the Guarani Indians. Scientists know of this surprising plant
only since the beginning of the XXth century; it was discovered by Euro-
peans during the conquest of South America by the Spanish conquista-
dors in the XVth century, and while it is cited from the XVIth century.

Since the 1970s, the Japanese have put forward the virtues of this ”mira-
culous” plant. It represents 40% of the market of sweeteners today.

Rébaudioside ( Reb A ), extracted from the plant of Stevia, indeed posses-


ses an enormous sweetening power and has the peculiarity of containing
no calories.

Authorized since the beginning of 2010 in France, the extract of Stevia is


a big innovation in the world of sugar taste. Today we cultivate planta-
tions of Stevia in numerous countries, such as China and South Korea. A
dream finally become reality for all consumers of sugar.

Extraction of Reb A contained in the leaves of Stevia:

Once the leaves of Stevia are harvested, they are then dried to allow the
extraction of the purest extract of the plant, Reb A:

1. Drying and microfiltration :


• Once stalks and cleaned leaves of stevia are dried in the sun, they are
then dried using dryers with hot air.
• The dried and ground leaves of Stevia are then handled with some
water, according to a method close to the process of infusion of tea, to
isolate and extract Reb A.

2. Purification and crystallization :


• The quantity is then purified to eliminate substances other than Reb A.
• The water is removed and Reb A is crystallized, appearing then as a
sweetening product of natural origin highly purified, which clearly impro-
ves its flavor.

Composition: 10 % of Rébaudioside A (stevia) and maltodextrine (of corn)

The maltodextrine:
• A maltodextrine is the result of the hydrolysis of a starch (wheat, corn)
or of a starch (potato). It is thus made up of various sugars (glucose, mal-
tose, maltotriose, oligosides and polyosides) directly stemming from this
reaction, in proportions that depend on the degree of the hydrolysis.
• Maltodextrines are widely used in the industry as the medium, the exci-
pient or agent of load. They have a very low sweetening power. They can
have the feature of improvement of solubility, the texture. Modern proces-
ses allow it to be encapsulized and/or gonflants (example of table swee-
teners where the aspartame is included in beads of maltodextrine that
are extremely voluminous).
• Attention: the maltodextrine other than of corn and potatoes contains
some gluten; otherwise it does not contain allergenic agents.

Why maltodextrine is used: applications in industry Maltodextrine ac-


counts for a strong proportion of the contents of power energy mixtures
intended for sportsmen. In transformed food it serves as agent of load to
ballast food. Its properties allow it to be used a medium of aromas. It is
moreover this last function which applies to creative cooking.
Finally it is an excipient (not actively frequent agent) in pharmacology. It
indeed enters the preparation of many medicines to give them, for exam-
ple, characteristics of taste, shape or solubility.
