SCRAMBLED EGGS WITH QUINOA

Ingredients: 4 eggs; 1 cup of quinoa already cooked; extra virgin olive oil; salt and
pepper; small chopped chives and red bell pepper

Preparation: We separate the whites from the yolks. Heat 2 or 3 tablespoons of oil in a
pan and pour the whites lightly beaten. With a wooden spoon we are constantly stirring,
when the whites begin to turn white, we pour the beaten yolks and the quinoa. We stir
for about 30 seconds and remove from the heat. Season with salt and pepper, and serve
with the chives and pepper on top.
