Q1 (a) Explain a stabilization method for water-in-oil emulsion spreads in margarine

production.

(b) Identify TWO (2) emulsifying agents in oil-in-water emulsion by giving an

example of each emulsion.
(2 marks)

(c) Assume that you have a project to produce a tablet which will be used in a
functional drinks preparation. Upon preparation, the tablet need to be immersed
in a glass of water therefore the determination of dissolution time of the tablet in
water before it is ready to be consumed is crucial. As a chemistry student, analyze
a procedure for contact angle determination to observe an optimum dissolution
time for the functional drinks preparation.

Q2 (a) Mr Hashim and his son, Yummy who is 10 years-old did a painting job to the
kitchen’s wall. However, Yummy urged an explanation from his father how does
the paint look nice on the wall. Help Mr Hashim to explain to his son by
illustrating a labelled schematic diagram in order to explain the role of additives
in paint.
