b. Industry Background

The precise definition of a dumpling is controversial, varying across individuals and cultures.

The term emerged in English by the 17th century, where it referred to a small lump of dough

cooked by simmering or steaming. The definition has since grown to include filled dumplings,

where the dough encloses a sweet or savory filling. Dumplings can be cooked in a variety of

ways, including boiling, simmering, and steaming, and occasionally baking or frying; however,

some definitions rule out baking and frying in order to exclude items like fritters and

other pastries that are generally not regarded as dumplings by most individuals.

2
Michelle Koh Morollo 2021, Dumplings have been around for a long time in the cuisines

of many different cultures. The first dumpling recipe appeared in a Roman cookery manuscript

called Apicius, which was assumed to have been written sometime in around A.D. 400,

and archeologists have found evidence of dumplings being eaten in China during the Tang

dynasty and in Switzerland as far back as 3,600 B.C.

According to S. Huang. Apart from steamed bread and noodles, Chinese dumplings are

another significant traditional wheat flour-based food in China. They are popular not only

throughout China, but also in Japan, Korea, and Southeast Asian countries. Chinese dumplings

were traditionally eaten on special occasions: festivals and celebrations; however, they are

becoming more widely consumed as living standards in China continue to improve. Chinese

dumplings are usually made from wheat flour dough sheeted to a thickness of 1.5 - 2.0 mm; this

sheet forms a skin which is used to wrap a variety of delicious fillings. The fillings usually

consist of mincemeat, vegetables, seafood or a mixture.

Dumplings is an Asian recipe, although it came from foreign countries, was loved by

many Filipinos. Dumpling is a delicious, bite-sized that’s made of savory ingredients wrapped

in dough and cooked. Dumplings can be steamed, boiled, or fried. Dumpling’s filling is

made up of either ground pork, chicken or fish, beaten egg, garlic, ginger, s e s a m e

oil and soy sauce. For the past food fairs in the University of Northern

Philippines, we haven’t seen anyone sell dumplings before.

Chinese dumplings, or jiaozi, are one of the most historic foods in existence. Much of the

food we eat today has only been around for a few hundred years, but the Chinese have made

jiaozi for over 2000 years. The concept of a dumpling is fairly simple. The most broad definition

3
out there describes a dumpling as a small amount of some sort of dough that is boiled, fried, or

steamed. These dumplings are also wrapped in a very specific way. Using the circle wrapper, the

dumplings are wrapped in a crescent shape. Along the rounded edge, there are specific pleats.

Dumpling consumption is thought to have begun around 200 BCE during the Han Dynasty. The

Chinese had figured out how to grind flour about 300 years earlier, which led to noodles and,

eventually, dumplings. Some say that the fish dumplings were made with lamb and pepper, but

since then, they have adapted. Most dumplings now have a pork mixture as their filling.

The price of dumplings considers in a high cost because of its ingredients its industry still

booming and successful. The most important thing that our customers may get from the

company`s product is the nutrition in the dumplings since its main ingredients have a lot of

health benefits. This new variety of dumpling products is delicious and healthy because of the

fish and vegetables.

To support the local economy of the Province of Sorsogon, our group wants to create a

new variety of dumpling which is the fish dumplings. Its main ingredient is "tamban" fish or

commonly called as lawlaw here in Bulan. Tamban is the fish that never disappears from the

market but is sometimes rarely eaten by people. So, we turned this into a filling of dumpling. On

February 2023 our finished product was divided by our group to sell it in order to get feedbacks

and it turns out that even kids could eat it even without asking what was the filling of dumpling.

In that case we learned that our dumpling is not just for teens and adults but is also for kids.
