Leche Flan

Ingredients
● 1 tbsp. of sugar per llanera

● 10 large or 12 small egg yolks

● 12 oz condensed milk

● 14 oz evaporated milk

● 1/4 tsp salt

● 1/2 tbsp lemon or lime juice (usually calamansi juice)

● 1/2 tsp vanilla extract

Directions
Step 1: Heat up the steamer to prepare it.

Step 2: Add the sugar to the llanera and caramelize the sugar on an open flame. (Do not
burn the sugar)

Step 3: In a bowl, separate the yolks from the egg whites.

Step 4: Add the egg yolks, condensed milk, evaporated milk, salt, calamansi juice, and
the vanilla extract in a bowl. Mix them all until it is all one color. (Make sure not to
overmix)

Step 5: Pour the leche flan mixture into the cooled llanera and cover it with aluminum
foil.

Step 6: When the water is boiling, put the llanera to the steamer and wait for 35-45
minutes.

Step 7: Pull out the llanera. Poke it with a toothpick to know if it's cooked. When it comes
out clean it is cooked.

Step 8: Wait for it to cool down or leave it in the refrigerator overnight.
