ABSTRACT

The present research study was carried out in La Unidad Educativa del Milenio Sayausí of
the city of Cuenca, province of Azuay; which had as a main objective to determine the
hygienic and sanitary conditions, both in food handling as well as in its expenditure, in the
school bar of the foresaid educational center. In this study, it is intended to establish a real
diagnosis about the situation in the different areas of the bar, acquiring a greater knowledge
about its strengths and weaknesses, to generate series of proposals that allow to optimize
the available resources the administrators dispose, and to establish a quality service for
consumers.

The methodology used to collect the significant information for handling and treatment of
food products was obtained by field research, taking out data and information directly from
reality through observation techniques; obtaining a single objective that is to improve the
gastronomic proposal sold in the bar of the educational center and by offering healthy and
innocuous food to the consumers.

On the other hand, in order to answer to the problems previously stated in the development
of the research, the technique of the structured type survey was applied, establishing a
representative sample, obtaining specific information on the perspective of consumers. The
analysis of the results determined the decision making and the feasibility of the project. For
its part, the training campaign about suitable food handling and food safety was made to
encourage a healthy food consumption in the school bar.

Finally, the conclusions and recommendations are made.
