KARE KARENG MANOK RECIPE

Kare-Kareng Manok is a Filipino dish that features tender chicken stewed in a rich and creamy peanut
sauce, typically served with a side of shrimp paste (bagoong). Here's a recipe to make Kare-Kareng
Manok at home:

Ingredients:

1 whole chicken, cut into serving pieces

1 cup peanut butter (smooth or chunky)

1 medium-sized eggplant, sliced

1 bunch Chinese cabbage (pechay), cut into chunks

1 bunch long beans (sitaw), cut into 2-inch lengths

1 large onion, chopped

4 cloves garlic, minced

3 tablespoons annatto seeds (achuete)

3 cups chicken broth or water

2 tablespoons fish sauce (patis)

Salt and pepper to taste

Vegetable oil for sautéing

Shrimp paste (bagoong) for serving

Instructions:

1. Prepare the Annatto Oil:

Heat about 1/4 cup of vegetable oil in a small saucepan over medium heat.

Add annatto seeds and cook, stirring occasionally, until the oil turns red and becomes infused with the
color of the annatto seeds, about 3-5 minutes.

Strain the annatto oil and discard the seeds. Set the annatto oil aside.

2. Sauté the Aromatics:

In a large pot or Dutch oven, heat a couple of tablespoons of vegetable oil over medium heat.

Add chopped onions and minced garlic. Sauté until fragrant and translucent, about 2-3 minutes.

3. Cook the Chicken:

Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
Pour in the chicken broth or water, enough to cover the chicken pieces.

Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the
chicken is tender and fully cooked.

4. Prepare the Peanut Sauce:

While the chicken is cooking, mix the peanut butter with about 1/2 cup of the chicken broth or water in
a bowl until smooth and well combined.

Once the chicken is cooked, stir in the peanut butter mixture into the pot, mixing well to incorporate it
into the broth.

Simmer for an additional 10-15 minutes, stirring occasionally, until the sauce thickens.

5. Add Vegetables:

Add the sliced eggplant, long beans, and Chinese cabbage (pechay) to the pot.

Cook for another 5-7 minutes, or until the vegetables are tender but still crisp.

Season with fish sauce (patis), salt, and pepper to taste. Adjust seasoning as needed.

6. Serve:

Transfer the Kare-Kareng Manok to a serving dish.

Serve hot with a side of shrimp paste (bagoong) and steamed rice.
