Definition of Terms:
The following are uncommon terms presented in the manual and is hereby
defined for clarity.

ABATTOIR Halal slaughterhouse.


CARRION The decaying flesh of dead animals.
HALAL In Shariah, anything that is permissible or allowable.
KHAMAR Wine or any alcoholic beverage.
MUSHBOOH Doubtful food products or ingredients.
NAJS Filth or Dirt.
DHABIHA Islamic slaughtering; is the prescribed method of ritual
slaughter of all lawful Halal animals.
QUR’AN Islamic scripture.
SHARIAH Islamic Law.

HALAL
• Arabic word which means “lawful, legal, legitimate, permissible,
allowed, admissible, not prohibited, or not forbidden”. The term covers
and designates not only food and drink but also all matters of daily life.
• Halal food is that which adheres to Islamic law, as defined in the Holy
Quran. The Islamic form of slaughtering animals or poultry, dhabiha,
involves killing through a cut to the jugular vein, carotid artery and
windpipe.
• In general, every food is considered Halal in Islam unless it is specially
prohibited by the Qur’an or the Hadith . By official definition, halal
foods are those that are free from any component that Muslims are
prohibited from consuming according to Shariah (Islamic law) and is
processed, made, produced, manufactured and/or stored using
utensils, equipment and/or machinery that have been cleansed
according to Shariah.

All foods are considered Halal except the following (which are
Haram):
▪ Alcoholic drinks and intoxicants.
▪ Non-Halal Animal Fat.
▪ Enzymes* (Microbial Enzymes are permissible).
▪ Gelatine* – from non-Halal source (fish gelatine is Halal).
▪ L-cysteine (if from human hair).
▪ Lard.
▪ Lipase* (only animal lipase need be avoided).
▪ Non-Halal Animal Shortening.
▪ Pork, Bacon / Ham and anything from pigs.
▪ Unspecified Meat Broth.
▪ Rennet* (All forms should be avoided except for plant / microbial /
synthetic – rennet obtained from halal slaughtered animal is permissible).
▪ Stock* (a blend of mix species broth or meat stock)
▪ Tallow* (non-Halal species)
▪ Carnivorous animals, birds of prey and certain other animals
▪ Foods contaminated with any of the above products
*May be consumed if derived from Halal animals.

HARAM

• The opposite of Halal which means “unlawful” or


“forbidden”. Haram Foods are those not Halal to consume
as per various Qurʼanic verses, such are:
• Pork
• Blood
• Intoxicants and alcoholic beverages
• Animals killed incorrectly and/or without Allah's name
being pronounced before slaughter.

MUSHBOOH
• Means doubtful foods or food products not confirmed whether Halal
(permissible to eat) or non-Halal (not permissible or not to eat).
• Foods containing ingredients such as gelatin, enzymes, emulsifiers, and
flavours are usually questionable, because the origin of these ingredients
is not known.
• In the meat and poultry food industry, animals such as cows, veal, lamb,
sheep, goats, turkeys, chickens, ducks, game birds, bison, venison, etc,
are considered Halal, but they must be prepared according to Islamic laws
in order for their meat to be suitable for consumption.
• Fish and seafood (with the exception of crocodiles, alligators and frogs)
are generally acceptable for Muslims. However, the preparation of the fish
or seafood should not include alcohol (ie. batter or wine, or anything
considered haram).
• Foods are labeled mushbooh when it is unclear whether they are Halal or
Haram.

HALAL SCIENCE CONCEPT

For the food to be considered HALAL, it must meet the following


two criteria:

HALAALAN - Arabic word which means LAWFUL. The


food must be earned/acquired lawfully and the food must
conform to the Islamic dietary laws.

THOYYIBAN - Arabic word which means GOOD. The


food must be wholesome, in the sense that the product,
especially food, must be safe, healthy, nutritious and hygienic.

PRINCIPLE 1: NATURAL PERMISSIBILITY (MUBAH) OF THINGS CREATED BY
ALLAH, UNLESS EXPLICITLY FORBIDDEN

• Things* which Allah (SWT) has created and the benefits


derived from them are essentially for human use and hence,
are permissible

“It is He who created for you all of that which is on the Earth..”
(Al-Baqarah, 2:29)

PRINCIPLE 2:TO MAKE LAWFUL AND TO PROHIBIT IS THE RIGHT OF ALLAH

PRINCIPLE 2:TO MAKE LAWFUL AND TO PROHIBIT IS THE RIGHT OF ALLAH

Prohibited to you are, dead animals blood, the flesh of swine, and that which has
been dedicated to other than Allah, and [those animals] killed by strangling or
by a violent blow or by a head-long fall or by the goring of horns, and those
from which a wild animal has eaten, except what you [are able to] slaughter
[before its death], and those which are sacrificed on stone altars, and [prohibited
is] that you seek decision through divining arrow….
(Al-Mai’dah, 5:3)

PRINCIPLE 3: PROHIBITION OF THINGS IS DUE TO THEIR MANIFESTATION
OF HARAM; FILTH / NATURAL REPULSIVENESS; INTOXICATION

PRINCIPLE 3: PROHIBITION OF THINGS IS DUE TO THEIR MANIFESTATION
OF HARAM; FILTH / NATURAL REPULSIVENESS; INTOXICATION

• Principle explained in Qur’an in relation to wine and gambling:

“They ask you about wine and gambling. Say, "In them is great sin and [yet, some] benefit
for people. But their sin is greater than their benefit."..”
(Al-Baqarah, 2:219)

PRINCIPLE 4: WHAT IS HALAL IS SUFFICIENT AND WHAT IS HARAM IS
SUPERFLUOUS

• Islamic injunctions in totality: not to make people’s lives


difficult, narrow, and restricted
• If Allah (SWT) limits the choice of Muslims in relation to some
things, He provides them with a still wider range of more
wholesome alternatives.

PRINCIPLE 4: WHAT IS HALAL IS SUFFICIENT AND WHAT IS HARAM IS
SUPERFLUOUS

PRINCIPLE 5: WHATEVER IS CONDUCIVE TO OR LEADS TOWARD HARAM IS
IN ITSELF HARAM

• The sin of the haram is not limited only to the person who
engages in it but extends to others who have supported him in
this, materially or morally; each is held accountable according
to his share

PRINCIPLE 5: WHATEVER IS CONDUCIVE TO OR LEADS TOWARD HARAM IS
IN ITSELF HARAM

Examples:
• Theft and Murder are haram, hence the means toward
procuring them are also haram
• For Usury (riba’), the Prophet cursed the one who pays it, the
one to whom it is paid, the one who writes the contract, and
the witness of the contract

PRINCIPLE 6: FALSELY REPRESENTING HARAM AS HALAL IS PROHIBITED

a) Resorting to technical legalities in order to do (legalized) what is


haram by devious means and excuses are prohibited [i.e. any
rationalization for engaging in the haram is haram]

PRINCIPLE 6: FALSELY REPRESENTING HARAM AS HALAL IS PROHIBITED

b) Calling a haram thing by a name other than its own or changing


its form while retaining its essence

Examples, as warned by the Prophet:


• “A group of people will make people’s intoxication halal by giving it
other names.”
• “A time will come when people will devour usury, calling it ‘trade’.”

PRINCIPLE 7: GOOD INTENTION DOES NOT MAKE THE HARAM
ACCEPTABLE

The Prophet said:

“Actions will be judged by intentions, and everyone will be recompensed


according to what he intended”

PRINCIPLE 7: GOOD INTENTION DOES NOT MAKE THE HARAM
ACCEPTABLE

For the case of haram:


• It remains haram no matter how good the intention, how
honorable the purpose, how lofty the aim may be
• NO to employing haram means to achieve praiseworthy ends

PRINCIPLE 8: DOUBTFUL THINGS SHOULD BE AVOIDED

The Prophet said:

“The halal is clear and the haram is clear. Between the two there are
doubtful matters concerning which people do not know whether they are
halal or haram. One who avoids them in order to safeguard his religion
and his honor is safe, while if someone engages in part of them, he may be
doing something haram”

PRINCIPLE 9: HARAM THINGS ARE PROHIBITED TO EVERYONE ALIKE

• Unacceptable, to make concessions in favor of particular


individuals and groups, localities, climatic conditions and the like
• Muslims may not relax the rules of haram in their dealings with
Muslims and non-Muslims

PRINCIPLE 9: HARAM THINGS ARE PROHIBITED TO EVERYONE ALIKE

• Nor would it be valid for one to make any concession on the


ground of common practice of something which is haram

Examples:
• Stealing is haram for Muslim and non-Muslim; If found guilty, the
punishment for it is the same, regardless of family or origin of the
thief.

PRINCIPLE 10: COMPELLING NECESSITY (DARURAH) DICTATES
EXCEPTION

• The prohibited must be strictly observed


• But, Islam is not unmindful to the necessities of life, to their
magnitude, nor to human weakness and capacity to face them
• Under compelling necessity, restrictions on the prohibited are
removed

HALAL FOOD

• Food and drink and/or their ingredients permitted under the Shariah
and fulfill the following conditions:

a) does not contain any parts or products of animals that are non-halal
by Shariah or any parts or products of animals which are not
slaughtered according to Shariah;

b) does not contain najs according to Shariah;

c) safe for consumption, non-poisonous, non-intoxicating or


non-hazardous to health;

HALAL FOOD

• Food and drink and/or their ingredients permitted under the Shariah
and fulfill the following conditions:

d) not prepared, processed or manufactured using equipment


contaminated with najs according to Shariah;

e) does not contain any human parts or its derivatives that are not
permitted by Shariah;

f) during its preparation, processing, handling, packaging, storage and


distribution, the food items a), b), c), d) or e) or any other things that
have been decreed as najs by Shariah.

HALAL FOOD

• Halal Food must be good, clean, pure, and wholesome, nourishing


and pleasing to the taste;

• Clear prohibition on pork, pork by-products, blood, blood by-


products;

• Prohibition of meat of lawful animals where the name of Allah (SWT)


has not been invoked during slaughter;

HALAL FOOD

• Prohibition of meat of animals which have not been slaughtered


according to Islamic guidelines;

• Prohibition of food items containing alcohol or intoxicants;

• Prohibition of food which are poisonous and harmful to health

SOURCES OF HALAL FOOD

• Animals
All land and aquatic animals are lawful, except:
a) Pig (swine), dogs, monkeys, fox, donkeys, cats, tigers, lions, and
elephants
b) Snakes, some reptiles
c) Carnivorous animals with claws and fangs such as lions, tigers,
bears, wolf and other similar animals

SOURCES OF HALAL FOOD

• Animals
All land and aquatic animals are lawful, except:
d) Birds of prey with claws such as eagles, vultures, and other similar
birds
e) Pests such as rats, centipedes, scorpions, and other similar
animals
f) Animals that live both on land and in water such as frogs

• Animals
All land and aquatic animals are lawful, except:
g) All poisonous and hazardous aquatic animals except when poison
is removed
h) Fish killed using dynamites
i) Others such as insects, and turtles/tortoise

SOURCES OF HALAL FOOD

• Plants
All types of plants and plant products and their derivatives are halal
except those that are poisonous, intoxicating or hazardous to health.

Foods which are forbidden according to Islamic laws (a, b, c, d, e)

In the Islamic Law, the following food and its derivatives are unlawful
(haram)..

Dead Inland Animals


• The beasts or fowls that died of natural causes without being slaughtered or
hunted by men. The purpose of slaughtering is to let the blood out and use the
flesh of the animal as food and thereby remove the slaughtered animal from the
category of “dead animal”

Strangled Beaten Partly eaten by wild beasts Fallen Gored

according to Shariah are:

• dogs and pigs and their descendants; • Halal food that is contaminated with things
that are Non-Halal;

• Halal food that comes into direct contact


with things that are Non-Halal;

• Any liquid and objects discharged from the orifices of human


beings or animals such as urine, blood, vomit, pus, placenta and
excrement, sperm and ova of pigs and dogs except sperm and ova
of other animals:
NOTE: Milk, sperm and ova of human and animals, except dog and pig, are not najs.

according to Shariah are:

TYPES OF NAJS

Three (3) types of najs:


a) Mughallazah (severe najs) - dogs and pigs including any liquid and
objects discharged from their orifices, descendants and derivatives;
b) Mukhaffafah (light najs) - urine from a baby boy at the age of two
years and below who has not consumed any other food except his mother's
milk; and
c) Mutawassitah (medium najs) - which does not fall under severe or
light najs such as vomit, pus, blood, khamar, carreon, liquid and objects
discharged from the orifices, etc.

NOTE: ALL Najs are Haram in case of Food preparation and service

TREATMENT TO OTHER FOOD SOURCE

• Cloned Animals
- Are yet to be produced commercially that it would soon be a source
of raw materials in food and non-food products.

• Cloning
- is permissible only if it does not cause harm to the environment and
ecological balance

TREATMENT TO OTHER FOOD SOURCE

• Genetically Engineered Foods or Genetically


Modified Organism (GMO) Foods
- refer to organisms, and products thereof, are produced through
techniques (recombinant DNA, cell fusion, micro and macro
injection, encapsulation, gene deletion and doubling) in which the
genetic materials have been altered in a way that does not occur
naturally by mating and/or natural recombination.

biological nature such as plants or organisms is allowed in Shariah if the
end product contains no najs material;

7. GMO food and ingredients are all Halal if the sources are Halal;

8. If the source of the GMO is taken from the poisonous food, it is Halal if
the poison is removed; and

9. Biotech crops and products have undergone intensive food and


environment safety tests and are acceptable in the Islamic world as
Halal provided that the sources are Halal.

Regularly used in commercial livestock and poultry farms which


fresh meats are distributed in wet markets and supermarkets.

It is also acknowledged that there have been instances of abuse in
