First, we would like to thank our Lecturer, Mrs. Nurul Safwah Binti Mohd Aminuddin Zaki who
was a constant source of inspiration. She encouraged us to think creatively and motivated us to
work on this assignment without giving it a second thought. She expressed full support and
provided us with the different teaching aids that were required to complete this assignment. She
believed in us even when we could not believe that we could do it. We are also thankful to every
member of this group Hazwan, Saffiyah, Uzma and Fatin.

It was every individual’s contribution that made this assignment a success. We were always there

INTRODUCTION

The consumption of Halal foods and goods is compulsory to all Muslims. The wholesomeness
concept of Halal, which covers not only the Shariah requirement, but also the sustainability
concept of hygiene, sanitation, slaughtering and safety aspect, makes Halal food readily
acceptable by consumers who are concerned about food safety and healthy life style. Therefore,
what is the source of halal and halal concept that should we follow?

Slaughtering in Islam need a right method in handling process to make sure the meat will be
Halal for Muslims to eat. So, we need to make sure and be careful for every tool and equipment
that we used are clean and safe for Muslims. Therefore, what is conditions of handling in
slaughtering in a right concept in Islam?

Food storage is especially needed in everyday industries nowadays such as manufacturing and
cooking. So, items that have been slaughtered must be stored in a closed place in order for safety
to be assured. In addition, cleanliness is also very important in operating this food storage area so
that the smoothness and quality of food is always maintained. Therefore, what are the
requirements and rules in operating food storage place?

These days, halal meat-based food products are distributed throughout the global market.
production and supply chain of halal meat-based products consist of many critical control points
and risks ranging from raw materials, production stage until the meat products reaches the end
users. Hence, what is the rule to ensure and maintain safety the meat in terms of transportation?

1.0 CONCEPT OF HALAL FOOD AND SLAUGHTERING

1.1 Definition Of Halal

The word halal is originated from Arabic word meaning permitted, allowed, authorized, approved,
sanctioned, lawful, legal, legitimate, or licit (DBP, 2005).

1.2 Dalil Of Eating Halal Food

Al-Quran has numerous injunctions instructing Muslims to choose and consume food and drinks,
Halal and Good (Halalan Thoyyiban) and forbid haram items. This matter has been clearly
mentioned in sentence 172 and 168 of Chapter Two (Al-Baqarah - The Cow) in the holy Qur’an.

“O ye who believe! Eat of the good things that We


have provided for you, and be grateful to God, if it is
Him ye worship”

Al-Baqarah (172)

“O ye people! Eat of what is on earth, Lawful and


good; and do not follow the footsteps of the evil one,
for he is to you an avowed enemy.”

Al-Baqarah (168)

1.3 Condition Of Halal Food


For a food to be Halal it must be as a whole and in part:

1. Free from any substance or ingredient taken or extracted from a Haram animal or
ingredient
2. Made, processed, produced, manufactured and/or stored by using utensils, equipment or
machinery that has been cleansed according to Islamic law.
3. Free from contact with, or being close to a Haram substance during preparation, making,
production, manufacture, processing, and storage.

1.4 Definition Of Halal Food

Halal Food is permissible to eat according to the teachings of Islam. This is essentially any food
that does not fall into the category of Haram (or forbidden). In Islam, all foods and beverages are
Halal except for those that were explicitly forbidden in the Quran. Muslims around the world
accept the Quran to be the book of perfect direction and bearing for humankind and believe the
Quran to be the last disclosure of Allah.

1.5 Example Of Halal Food

The following products are Halal:

i) Fish
ii) Honey
iii) Fresh or dried fruits
iv) Plants, which are not intoxicant
v) Fresh or naturally frozen vegetables
vi) Milk (from cows, sheep, camels, and goats)
vii) Grains, such as wheat, rice, rye, barley, and oats.
viii) Halal animals slaughtered according to Islamic Rites
ix) Legumes and nuts like peanuts, cashew nuts, hazel nuts, and walnuts

1.6 Source Of Halal Food ( Land Animal )

Halal food of animal origin which is it can divide into two main categories .First of all, halal food
of animal origin can be divided into two main categories which is land animal and water animal.
All land animals are permitted to be eaten except animal not slaughtered according to Islamic Law,
Pigs, Dogs and Carnivorous animals that slash and kill, such as tigers, bears, elephants, and other
similar animals. Besides, the birds with claws or birds that feed by snatching and tearing, such as
eagles and other birds similar. (Scavengers and birds of prey) and animals with insects forbidden
to be killed in Islam, for example ants, bees, and woodpecker. In addition, animals which are
generally considered as repulsive as lice, flies, maggots, and animals which are permitted to be
killed in Islam for instance rats, centipedes, eagles, scorpion are not allowed in Islam Law.

1.7 Source Of Halal Food ( Water Animal )

The water animals are those which live only in water. They are Halal (Permissible) and can be
eaten, except if poisonous, harmful to human health and intoxicated. Meanwhile the water animals
are halal and can be eaten such as fish, crab, prawn, and other similar animals.

1.8 Source Of Halal Food ( Plants )

In Islam all types of plants and their products are Halal (permissible) and can be eaten except if
the plants are poisonous for instance Golden Dewdrop, Deadly Nightshade and White Cedar Tree.
Furthermore, the plants that intoxicated and harmful to human health such cactus and marijuana
are forbidden. The marijuana can make a person hallucinations and panic attacks. Because of that,
marijuana is haram in Islam for protection of our life and healthy.

1.9 Definition Of Slaughtering

According to Islamic law, the Arabic word for the ritual of slaughtering animals is known as
zabihah, which essentially deems the slaughtered meat as ‘halal’ or permissible to eat. It is
applicable on the slaughter of lawful (halal) animals like chicken, sheep, goat, cow and etc and
becomes null and void on the slaughter of unlawful animals like pigs, dogs, cats etc. The method
of zabihah is governed by a set of strict rules which need to be followed.

1.10 Makhrooh Acts While Slaughtering:

(i) To slaughter an animal at a place where another animal of its own kind can see it.

(ii) To skin an animal before it has died.

(iii) To slaughter an animal on Friday night (i.e. the night preceding Friday), or on Friday before
Zuhr. However, there is no harm in doing so in the case of necessity.

(iv) To slaughter an animal which someone has bred and reared himself.

2.0 RULES IN HANDLING SLAUGHTERING

2.1 Definition Of Handling

Handling means the action of one that handles something or the act or cost of moving, storing or
packaging goods or the manner of treating or dealing with something, management or treatment.
Handling also means that the way in which someone deals with particular situation or problem.

In Quran, Surah Al-An’am (118), Allah have said that

“So eat from (the slaughter of halal animals) that


the name of Allah is mentioned when slaughtering
it, if you truly believe in His verses.”

2.2 Conditions Of Handling Slaughtering Animal In Islam


A. Slaughter
- Severing the halkum and marih veins.
B. Slaughter animals
- The animal must be halal to be eaten by the Muslim
The animal must be al an'am :-
a. Camel
b. Cow/buffalo
c. Sheep
d. Goat

- The animals must be in perfect conditions which means that it doesn’t have any disability
on the body, mind and doesn’t have any sickness

C. Butcher
1. Slaughtering must be done by a sane adult Muslim. Animals slaughtered by a non-Muslim will
be illegal or Haram.
2. Sensible
3. Puberty
4. The butcher can’t perform slaughter in the ihram of Hajj

D. Tools Of Slaughtering

1. Not all tools can be used as sacrificial tools. This is actually a form of kindness to animals so

that when they are slaughtered, they don't get sick and they die quickly.

2. Rasulullah s.a.w said:

It means: "Indeed Allah has written (required) ihsan over everything. If you want to kill (with a

valid reason), then make the killing easier. If you want to slaughter, then make the slaughter

easier, and you should sharpen the blade and let him rest (pleasure) the slaughtered animal".

(Hadith Muslim )

2.3 Method Of Handling Slaughtering In Islam

i. The slaughtering animal or the chicken must be tied in a best way to prevent an injury as
it has to be in the best condition.
ii. It has to follow the proper way in Islam to prevent the food from becoming haram
because of the wrong method.
iii. The slaughtering animal must be segregated to take a good care of their welfare following
the Islam way
iv. The knife that being used must be sharp and the slaughtering process have to be quick
without the knife get loose from slaughtering animal’s neck
v. The knife can’t be honed in front of the slaughtering animal to take care of their welfare
vi. The place must be in a clean condition to prevent the bacteria breeding.

3.0 RULES IN STORAGE HALAL FOOD

3.1 Definition Of Storage

A storage place is a place to store the items so that it remains safe and not perishable. Often storage
places are equipped with security systems to ensure that stored items are not stolen or entered by
unwanted animals.

3.2 Requirements In Storage Halal Food

As people known, slaughtered chicken meat should be stored in a frozen place such as chiller, blast
freezer, freezer and other storage room shall be part of the approved establishment and of the same
address. Slaughtered meat should be frozen at 4 Celsius (chiller) and -18 Celsius (blast freezer),
this is the minimum temperature set and should be kept as cold as possible. With a controlled
temperature environment, Muslims are confident that slaughtered meat meets the standards set by
the government for safe storage of meat.

3.3 Methods Of Storage Place

The storage place should be in a clean condition from dirt and feces. The refrigerator should be
cleaned first before the chicken meat is stored in the refrigerator. This is to purify the storage place
from unknown feces. Besides, should avoid dogs and pigs through the storage area. Rasulullah
has been stated in a hadith to clean a place first before using it :

“ The cleansing of the utensil belonging to one of you,

after it has been licked by a dog, is a wash it seven time

and using soil for cleaning at the first time “

[ Sahih Muslim (279) ]

Furthermore, non halal conformance carcasses and product shall be stored in designated chiller
and clearly labelled. Halal carcasses and products shall not be stored together with those that are
non halal conformance. Therefore, cartons containing non halal conformance products shall be
clearly labelled and stored separately in designated area in the freezer.

Record on non halal conformance shall be made available upon inspection by auditors and storage
of carcasses and offals from other establishment or independent boning room is not acceptable.

The storage plant that is completely packed in the form of cartons and clearly labelled with the
establishment number may be accepted.

4.0 SUPLY CHAIN OF HALAL FOOD

4.1 Definition Supply Chain Of Halal Food

Halal transportation is one of the field of the supply chain in which Halal product are handled
from non halal product to avoid cross contamination in order to maintain their halal integrity.
The important decision of designing halal distribution system is determining the location of
facilities. In this paper, a halal and non-halal demand constrains with vehicle flow formulation of
an uncapacitated location routing model is presented. Halal and non-halal goods are not mixed
on a same transportation vehicle. Its a clear difference in transportation of halal and non-halal
goods .

4.2 Definition Of Halal Meat Supply Chain

Halal meat is one of the major sources of proteins for food consumption and it is rich in social
meaning due to its association with cultural eating habits and rituals for both religious, Islamic
and secular. Beef, mutton, and chicken are the three types of meat that make up halal food
products, and they can be found fresh, chilled, frozen, or processed.

4.3 Halal Meat Supply Chain Contamination Risks

The most important factors that will affect the halal meat supply chain are the risks of cross
contamination to the meat products along the halal supply chain process ranging from the raw
materials until the finished food products received by the end user. The dangers of cross-
contamination to the meat products throughout the halal supply chain process, from the raw
materials till the completed food items obtained by the end user, are the most significant
elements that will have an impact on the supply chain for halal meat.

4.4 Halal Meat Based Food Products And Regulatory Framework

The process of halal meat supply chain involves the process of segregation throughout the entire
chain. Therefore, during processing, handling, manufacturing, packaging, storage, transportation
and display, halal meat based food products should be physically separated from the non-halal
ones. Image1 , illustrates the flow of Regulatory Framework of the halal meat supply chain in
Malaysia. From image 1, The procedures of food production and logistics can be divided into
two categories for halal meat-based food products. It demonstrates the first four major steps in

food production before the meat is transformed into a finished food item. Meat processing,
slaughtering, and food preparation for halal meat-based goods are all permissible up until the
point where the meat is transformed into a final food item. After that, using an efficient logistics
procedure, the finished food products are delivered to the final consumer. It is evident from the
process flow that all phases of the supply chain for halal meat are subject to appropriate legal
requirements and norms. The government of Malaysia and the relevant organisations have
passed the laws and norms.

4.5 Important Step To Ensure The Integrity

The logistics of transportation are crucial to maintaining the integrity of Halal production. It
must be ensured that non-Halal materials, such as hog carcasses, do not contaminate Halal meat
or meat products. If Halal and non-Halal products are not properly separated from one another
and are combined in the same container, there is a risk of cross-contamination. In order to avoid
any purposeful or incidental direct contact with substances that can compromise the Halal status
of products, research has consistently demonstrated the need for physical segregation of Halal
items. Customers may therefore begin to question if the product is actually Halal, which will
cause them to reject the Halal product.

CONCLUSION

The purpose of this research was identify what is Rules in eating halal foods. Based on the analysis
consumed, it can be concluded that there are multiple kinds of Halal terms terms to make our life
easier and more convenient, particularly for Muslims. As the Muslim population from all over the
world grows from time to time, the use of halal principles all aspects is necessary to satisfy the
needs of Muslims. The wholesomeness concept integrity oh Halal, which covers not only the
requirement of Shariah Law but also the concept of sustainability oh hygiene, sanitation and safety
in every aspect.

Through the objectives studied there are many rules in halal food that need to be obeyed including
slaughtering, storage and transportation. The concept of rules in halal food includes how the halal
food condition, resources of halal food and definition of slaughtering. In addition, the rules in
slaughtering explain the methods in slaughtering in Islam such as the slaughtering animal or the
chicken must be tied in a best way to prevent an injury as it has to be in the best condition.

Next, the rules in the handling of raw meat storage areas are explained about the requirements in
storage areas in terms of refrigerator temperature. In addition, it also explains the methods and
rules in the storage of raw meat such as the place and equipment of the storage must be included
before use. In addition, this chapter explains the transportation of halal food. In this he explains
about the halal meat supply chain contamination risks and halal meat based food products and
regulatory frameworks.

Finally to ensure and maintain safety the meat in terms of transportation is not as easy as we think,
it requires very organized and careful steps to ensure that the halal meat still does not violate
Islamic Shariah . As consumers of halal meat we also need to be careful and wise in choosing halal
meat that has been certified by the government.
