PEST CONTROL

OBJECTIVE:
To prevent entry of rodents, insects and vermin into the working area and contaminating the
food and food contact surfaces.
RESPONSIBILITY: EHS manager, Housekeeping and Stewarding.

PROCEDURE:
Employees will use an integrated pest management program (IPM) using the following steps:
Deny access to pests
Use reputable suppliers for all deliveries.
Check all deliveries before they enter the food service department.
Refuse shipments that have signs of pest infestation.
Keep all exterior openings closed tightly. Check doors for proper fit as part of the regular
cleaning schedule.
Report any signs of pests to the concerned HOD.
Report any openings, cracks, broken seals or other opportunities for pest infestation to the
food service manager.
Deny pests food, water and a hiding or nesting place
Dispose of garbage quickly and correctly. Keep garbage containers clean, in good condition,
and tightly covered in all areas (indoors when not in repeated use and outdoors). Clean up
spills around garbage containers immediately. Wash, rinse, and sanitize containers regularly.
Store all food and supplies as quickly as possible.
Keep all food and supplies at least six inches off the floor and six inches away from walls.
Refrigerate foods such as powdered milk, cocoa, and nuts after opening or store in storage
containers. These foods attract insects, but most insects become inactive at temperatures
below 4°C. During long breaks, store flour and corn meal products under refrigeration to
prevent weevil eggs from hatching.
Use FIFO (First In, First Out) inventory rotation.
Wet towels and mop heads should be taken to the laundry area at the end of each shift to
minimize the risk of infestation by pests. Store mop heads and broom ends off the floor.
Clean and sanitize the facility thoroughly and regularly. Careful cleaning eliminates the food
supply, destroys insect eggs and reduces the number of places that pests can take shelter.
Out doors are kept closed, processing areas are screened with plastic curtains/ doors and
electric fly-killing devices are located in front of entrances to processing areas to control flies
and insects. No pets are allowed in to the Kitchens and restaurants. Supervisor report any pest
signs to the Executive Jr. Sous Chef.
Electric fly killers (EFKs) are regularly serviced and emptied.
External
External contactor (Pest Free) is assigned for controlling the pests inside and outside of the
food premises. The contractor inspects the interior and outside of the food facilities and treat
as necessary with appropriate approved and registered pesticides.
The Pest Control Operator (Pest Free) should decide if and when pesticides should be used in
the facility.

PCOs are trained to determine the best pesticide for each pest, and how and where to apply it.
Recommendations are taken every monthly visit by Contractor (Pest Free) to implement
effective pest control program.
The agency is provided with approved chemicals, Material Safety Data Sheet (MSDS) and they
confirmed & assured that they are maintaining property from free of pests and insects. A pest
control map is also being maintained.
The agency is performing a service in a professional manner by using approved pesticides and
insecticides.
While spraying it is ensured that the area is free of food items.
Chemical is allowed to react for at least one hour and then the area is thoroughly washed and
disinfected.
Pest control treatment is carried out as per schedule and the records from external agency are
maintained.
Monitoring Frequency:
Daily before operations.
Corrections:
Conditions that may cause pest problems are corrected.
The Pest control contractor is notified of any pest infestation signs are observed is expected to
deal with the problem for effective solution. Pest treatment are more frequent if problems are
more frequently identified or pest control method or pesticides should be revised for efficiency.
