Nonstick cooking spray 1. Heat a medium nonstick skillet over medium-high heat; lightly coat
1 cup fresh baby spinach with spray.
2 large eggs, lightly beaten 2. Add spinach and eggs; stir until spinach wilts slightly. Lay tortilla
over top; cook for 1 minute. Flip; season with salt. Cook for 1

• Avocado can be replaced with ¼ cup shredded cheese of your choice. Sprinkle
cheese over the eggs before you add the tortilla.
