Appendix B – Dietary Requirements Template

Dietary Requirements

Dietary requirements
(Summarise the special request or dietary requirement that needs to be addressed. What is it? How might the issue
affect the customer if failed to address I adequately?)

The menu plan must be prepared keeping in mind the specific dietary needs to provide the environment in which
everybody feels accepted and safe. An illustration of this is when a guest who is allergic to gluten eats food items
that contain gluten. It might lead to discomfort, digestive disorders, and, more serious problems, like celiac disease
flare-ups. Furthermore, the people with nut, dairy or shellfish allergies should also be very careful as these could
cause anaphylactic shock if not treated with due diligence.

Strategy
(Describe how you will adjust your recipe to address the dietary requirement)

To cater to dietary preferences efficiently, the menu will have clearly marked food items for the frequently
experienced dietary restrictions like gluten-free, peanut-free, dairy-free, and vegan options. For the gluten
intolerance example:

Adjusting Recipes: Instead of using gluten-containing ingredients, try the gluten-free alternatives. Write your own
text with the Artificial Intelligence (AI) assistant. Take for example the pizza dough, which can be made with either
gluten-free flour or certified gluten-free French stick for the garlic bread.

Cross-Contamination Prevention: Adopt strict kitchen protocols to avoid cross-contamination, such as using
dedicated equipment and areas for gluten-free meals. The employees will be inspected on safety practices so that
they can understand how to follow them.

Ingredient Transparency: Formulate ingredient list for each menu item. The transparency lets clients be able to
make conscious selection and the consumers, in turn, feel safe knowing that the ingredients of each dish are known.

Using recipes which are fit for people with dietary needs and maintaining the highest standards of food handling
will ensure guests with dietary restrictions to have a great time in a safe environment, indicating the restaurant’s
priorities in the area of inclusivity and customer care.
