It is an indoor crop, grown independent without sunlight and do not require fertile land and can be grown on small
scale as it does not include any significant capital investment. Mushroom cultivation will improve the socio-economic
condition of farmers, families and solve employment problems of both literate and illiterate of rural areas and semi-
urban, especially women. Mushroom cultivation is a women friendly profession. Mushroom growing is an agricultural
activity in which women can utilize their spare time and play a vital role without sacrificing their household
responsibilities. Promotion of mushroom cultivation could relieve pressure on land, increase food and nutritional
security and uplift the status of women through earning additional income and in household decision making as far as
concerned. Mushroom substrate can be prepared from any clean agricultural waste material, and mushrooms can be
produced in temporary clean shelters. They can be cultivated on a part-time basis and require little maintenance.
Mushroom cultivation activities can play an important role in supporting the local economy by contributing to
subsistence food security, nutrition, and medicine; generating additional employment and income through local,
regional and national trade; and offering opportunities for processing enterprises such as pickling and drying.
Total production of mushroom in Bihar is more than 2000 tonnes and it is increasing at very fast rate. Oyster as well
as Button mushroom offers good potential for its cultivation in Bihar because of its sub-tropical nature. The Front-Line
Demonstration and training conducted by Krishi Vigyan Kendra, Hajipur and Muzaffarpur (Additional) plays an
important role in popularized the production of mushroom in Vaishali and Muzaffarpur district. The trained people
after getting proper know how and skill started its production. Apart from the trained trainees, a lot of other farmers
and farm women started its cultivation by seeing their neighbour and fellow farmer nearby villages. But methods of
mushroom cultivation of these two groups differ a lot and the difference were mainly due to proper training from KVK
taken before mushroom cultivation was started. 1.
A mushroom is fleshy, spore-bearing fruiting body of a fungus, produced above ground, on soil, or on its food source.
It is a nutritious vegetarian Delicacy and contains many varieties. Mushroom contains many vitamins & minerals and
it is low on sugar & fat. It consider as a major horticulture product all over the world. Cultivation of mushroom needs a
temperature between 20 & 30 degree Celsius. Ideally it can be grown in hilly areas or in artificially controlled
temperature by building sheds in plain area.Mushroom Canning is a method of preserving mushroom in which the
food contents are processed and sealed in an airtight container (jars like Mason jars, and steel and tin cans).
Canning provides a shelf life typically ranging fromonetofiveyears,althoughunderspecificcircumstancesitcanbemuch
longer.

minerals. In addition, 70 grams of raw mushrooms contain 2.3 grams of carbohydrate and 15 calories,
thereby makingitalowcaloriefood.Moreover,mushroomisagood sourceoffibers such as soluble fiber and beta
glucan. In addition to vitamins and minerals, the product is found to be a rich source of antioxidants, which
may help in cancer prevention. Demand for canned mushroom is expected to growover the forecast period
owing to various health benefits associated withit.

Canned mushrooms refers to the product prepared from the sound, succulent, fresh mushroom by proper
trimming, washing, and sorting and is packed with the addition of water in hermetically sealed containers
and sufficiently processed by heat to assure preservation of the product. Salt, or monosodium glutamate, or
both may be added in a quantity sufficient
toseasontheproduct.Ascorbicacid(VitaminC)mayalsobeaddedtoimprove the shelf life. Uses of canned
mushroom is asfollow:
• The canned mushrooms can be added to salads, rice preparations and as a delectable topping
onpizzas.
• The canned mushrooms can be used for various Indian recipes like mushroom matar (with peas),
tandoori mushroom (grilled mushrooms)or even mushroombiryani.
• Mushrooms are legendary in providing a wealth of nutrients ranging from protein, fiber, B vitamins,
and vitamin C, to calcium and otherminerals.
