 Primary Aim: Food preservation
 Storage temperature ranges from 00C to 40C
 Deep Freezer temp. kept much below freezing
point
 Cycle: Vapour Compression Refrigeration Cycle
 Refrigerants: R134a (R12, R22)
 Size/Capacity specified by storage volume
 Compressor: 75-370W

 Compressor mounted at bottom of refrigerator
frame
 Condenser put at back (40-60mm away cabinet)
 Condenser: Chassis type or Tube and wire type
 Chassis Type: condenser tubes mounted on metal
sheet
 Tube and wire Type: condenser tubes held tightly
under wire frame from both sides
 Expansion device: Capillary Tube
 Drier may be used to eliminate traces of moisture

 Freezer chamber may be made of pair of sheets
 Passage between them can act as evaporator
 Lower storage space cooled by natural convection
 Thermostatic sensing element provided

 Insulation: glass loose fill fibre/glass
roll/thermocole
 Thickness 60-100mm

WATER COOLERS
 Purpose: To supply water at a constant
temperature (70C-130C) irrespective of ambient
temperature

ICE PLANTS
 Commercial ice produced by freezing water in
cans placed in rectangular tanks
 Tanks filled with brine at -100C to -110C
 Refrigerant used: Ammonia
 Condenser: Shell & tube/ Evaporative
 Evaporator tubes are wound around brine tank
 Water/ Ice cans are kept inside the brine tanks

COLD STORAGES
 Buildings designed to store goods like food
stuffs, fruits, vegetables and dairy products
with well defined temperature range and
relative humidity
 Two types: a) storage above 00C b) below 00C
 Refrigeration slows down deterioration
 Additional heat load: heat of respiration

QUICK FREEZING
 Rapid freezing improves storage life of food products
 Done by force circulation of cooling medium
1. Immersion Freezing
 Immersed in cooled liquid (NaCl/sugar brine, PG)
 for fish/ shrimp

2. Indirect Contact Freezing (Plate Freezing)


 Used for fruits, vegetables, meat, fist etc.

3. Air Blast Freezing


 Cool air (-20 to -400C) circulated in tunnel type storage
 for fish fillets, shrimp, steaks, scallops, packaged food

PLATE FREEZING
 Food product is frozen by direct contact with
metal surface
 Loading capacity: 100-1200 kg
 Advantage: food retains taste and colour
 Disadvantage: larger ice crystals formed on
surface
 Used for fruits, vegetables, meat, fist etc.
