BEVERAGE OUTLETS OPERATING CHECK LIST


GENERAL OBJECTIVES;
To understand the Beverage outlets, Bar Personnel
and Operating.

ENTRANCE
ENTRANCE

• Is the entrance appealing to the eye?


• Is there signage at the entrance at the?
• If you have a dress code, is it displayed?
• If you have a charge, is it displayed?
• Is the entrance lockable?
• Do you have sufficient lighting at the entrance?
ROOM: - Setting area, restaurant/ Bar
etc.

•Do you have correct lighting levels?


•Is the room free of stale odors?
•Is the carpet clean?
•Do you have signage denoting toilets?
•Do you have signage denoting fire escape?
•Are the walls clean and free of scratches?
•Is the wallpaper in good condition?

•Are the tiles in good condition?
•Is the woodwork free of scratch marks
and cracks?
FURNITURE AND CHAIRS

• Are the table in good condition?


• Is all the upholstery free scratches and tears?
• Are the bar stools in good condition?
• Is chewing gum removed from furniture?
BAR COUNTER

• Is the bar counter stain and scratch?


• How often is it polished and treated?
• Is the foot rail clean and properly secured?
WORKING COUNTER (BARMEN)

• Is the working counter neat and clean?


• Are all products properly displayed?
• Is the glassware properly stored?
SPEEDRAIL/ SHELVES

• Are they and clean?


• Are the shelves properly secured?
• Are all products properly displayed?
• Are pourers/tot measures washed on a regular basis?
• Are the bottles wiped often enough?
FLOOR(BEHIND COUNTER)

• Is the mat in good condition?


• If you have a mat, is the cleaned regularly and washed?
• Is the floor mopped on a regular basis?
UNIFORMS

• Are uniforms in good condition?


• Are casual staff issued with uniforms?
• Do all staff have the same uniforms?
• Do all staff wear and name badge?
• Are all dirty uniforms changed for clean uniforms often
enough?
CLEANING

• Do you a daily cleaning schedule?


• Do you have regular cleaning basis?
• Is there sufficient cleaning equipment?
EQUIPMENT

• Do you have sufficient glassware for the various drinks?


• Is all glassware cleaned correctly and crack or chip free?
• Re sufficient ashtrays?
• Does the barman have sufficient bar tools?
• Do you have sufficient equipment to cope with the business?
• Do all service staff have waiter’s friends?
EQUIPMENT Cont……
• Do all service staff have waiter’s friends?
• Are there enough ice buckets?
• Are there enough tongs?
• Does every barman have drip trays and tot measures?
• Is all operating equipment stored correctly?
• Is all equipment of the same pattern Glassware/ Crockery etc?
• Are all the tills in working order?
ICE MACHINES

• Are the machines in working order?


• Do they produce sufficient ice as required?
• Are they serviced regularly?
• Do you have enough ice on daily basis?
STAFF

• Are your staff neat and presentable?


• Do they know their product?
• Do you have regular meeting with your staff?
• Have your staff been taught sales skills?
• Do you have enough staff to meet with your business demand?
• Do your staff get job satisfaction?
STAFF Cont……

• Do your staff know what is expected from them?


• Do you know how to connect/ disconnect all dispensing
equipment?
PRINTED MATTER

• Are menus/ cocktail list in good and clean condition?


• Do you encourage printed matter in your bars?
FRIDGES

• Are all fridges in working order?


• Do you have shelving in the fridges?
• Are fridges cleaned regularly?
• Are all products packed correctly in the fridges?
DISH/ GLASS WASH EQUIPMENT

• Is the machine in proper working order?


• Do you have the required cleaning chemicals?
• Is the machine properly manned by well-trained staff?
DOORMAN / BOUNCERS

• Are the security personnel / doorman dressed uniformly?


• Do they know what is expected from them?
• Do you carry their duties out in an efficient manner?
• Do they know how to handle difficult clients?
MANAGERS

• Do you do regular checks on the status of your outlets (interior)?


• Are you involved in stocktaking?
• Do you motivate your staff?
• Do you have a member of your team allocated to beverage outlets?
MANAGER cont…
• Do you encourage promotions and merchandising?
• Are the beverage outlets visited daily by management?
• Are cost targets being met and if not do you have an action plan to
rectify this?
• Is your management team involved in in the budgets and expenses?
• Do you carry the correct stock and work on a par stock system?

• Do you what your opposition is doing at all times?
• Do you know your guest demands?
• Are you controlling your range of products?
• Are the bar staff making use of pouring brands?
• Do your staff have a sound knowledge of all the products they sell?
• Are you staff capable of making cocktails?
