ENGINEERING OF PINEAPPLE
TEA PRODUCTS WITH TYPES OF
VARIATIONS AND
CONSENSTRATION OF
PINEAPPLE EXTRACT
Tea is one of Indonesia's superior commodity products.. One of the efforts to develop tea
products is by making pineapple flavor tea through the principle of product technology.
Product technology is a development that alters the flow of chemical engineering that
once focused on the process of being product-focused. Product technology is supported by 4 initial
stages of needs, ideas, selection, and manufacture. Through this early stage, got the idea by
making tea drink from pineapple.

In this study, the manufacture of pineapple flavored tea is done by making pineapple
extract, tea making, and mixing pineapple and tea extract. In the preparation of pineapple extract
was done by extraction method with total solution of 200 mL with variation of ratio of tea and
pineapple 1: 1, 2: 1, 3: 1, 4: 1, and 5: 1, respectively. In making tea is done variations with the type
of black tea, green tea, and white tea.
This research is divided into two stages, namely preliminary research and main
research. Preliminary research is to analyze pineapple juice and tea as raw
material. In the main research is mixing and organoleptic test.
Tea is a beverage material made from the young shoots of tea leaves that have
undergone processing. Tea is one of the plantation commodities that has a strategic
role in the Indonesian economy. Indonesia is the fifth largest tea producer in the
world.
One way to increase the level of tea production and consumption in the
community is to make tea with new nutritious fruit flavors that can improve public
health. A new fruit variety with a distinctive flavor image and many benefits is
pineapple.
Pineapple (Ananas comosus) is a fruit that is a mainstay of commodities in
Indonesia's export activities because it has a distinctive taste and contains many
vitamins such as vitamin C. This can be seen in the strategic plan of the Ministry of
Agriculture of the Republic of Indonesia for 2015-2019 where pineapple is one of
the focus of commodity orientation. export. Pineapple can be a mainstay in
Indonesia's export activities because Indonesia is a leading producer sector at the
Asian level with several countries such as China, India, Vietnam, the Philippines and
Thailand.
Pineapple fruit is generally consumed as fresh fruit and only lasts for 2-3 days, so
a lot of pineapple fruit is wasted and cannot be consumed due to the absence of by-
products from pineapple. Therefore, it is necessary to have a new innovation in
pineapple to convert pineapple into a product, where the product can be used for
consumption purposes and does not become redundant. One of the new
innovations is making tea from pineapples.
How To Make Pineapple Tea
• Ingredients :

• 8 bags of Original SariWangi Tea

• 1 pineapple that has been peeled and washed, then the pulp is cut into cubes

• 1 stick of cinnamon

• 2 liters of mineral water

• Honey to taste (for flavor)

How to make :
1. Boil the water until it boils, then add SariWangi teabags to the boiling water.

2. Dip the tea bag until the water turns a deep brown color.

3. After lowering the heat, add the cinnamon and mint leaves to the tea water and let it sit for a
few minutes.

4. Blend the pineapple fruit and put the pineapple juice in the refrigerator for 1 hour.

5. Mix the tea water that has been made with pineapple juice that has been cooled beforehand.

6. If you want to make a sweet drink, add honey to taste and stir until dissolved.

7. Add ice cubes to taste, and Pineapple Tea is ready to serve.

Benefits of Research

This research is expected to be able to provide benefits and impacts both for
students and the wider community, such as:
1. For Students:
Increase knowledge and insight in the use of pineapple as a consumption
product that can be consumed by many people.
2. For the food industry:
Adding a new idea about pineapple processed product innovation.
3. For the government:
Assisting the government in increasing the power consumption of tea and
pineapple.
