LOCATION AND HISTORY

The Grotta Palazzese restaurant is internationally renowned, as

evidenced by the many reviews on the most important magazines and
blogs around the world. It has an outdoor lounge, set in a unique place
in the world. In fact, the terrace that welcomes guests has been created
within a natural cave, the "Grotta Palazzese" (or "di Palazzo", as it
was once called), from which it takes its name, a place known and used
for parties and banquets since 1700. Famous, to regard, it is the
watercolor of Jean Louis Desprez of 1783.

THE TERRACE
The terrace can accommodate up to 150 people, in a place that, although
outdoors, is sheltered from the vault of the cave. On one side it overlooks the sea,
with a splendid view of the coastal landscape and the marine horizon; on the other,
towards the larger cave, the cave itself being composed of two caves of different
sizes. The entire terrace also includes an area with more reserved seats.
A FEW BITS OF ADDITIONAL INFO:
• Reservations – I found The Summer Cave at Grotta Palazzese to be very responsive and easy
to communicate with via email. They do require a credit card to hold your reservation.
• Parking – The hotel does not have its own parking. They will send you a map to show you
where the nearest paid parking lot. We were able to find parking on the street, though it was
challenging to interpret the various parking signs (and the translation that Google Translate
provided was indicative of the limits of that technology at this time). We found a car leaving a
space and hoped for the best.
• Photographs – The staff at The Summer Cave at Grotta Palazzese are fine with you walking
around to take photographs. I found that the best vantage point, to take a photo of the entire
grotto, was from the tiny window in the lady's room.
• Leave yourself a couple of hours to explore Polignano a Mare. Maybe more if you want to
relax on the beach.

ARCHITECTURE
Vikas Dilawari, the renowned Mumbai-based conservation architect, was invited to make the conservation plan
for the bunker. In his report, he quotes lines from Jan Morris’s book Stones of Empire: The Buildings of the Raj
(1983) that notes: “…in the last days of British rule, when the city seethed with patriotic unrest, they built an
underground bunker beneath the happy bungalows of Malabar, equipped with bedrooms and kitchen for a long
stay. A motor road led into it big enough to accommodate the governors Daimler and a water-gate in the rock
face gave access to a jetty in the case His Excellency needed to make a hasty getaway”

After the structural audit, the strengthening of the bunker’s structure was carried out and then, the design of
the museum chalked out.

INTERIOR SERVICES
DRAINAGE
The entire underground bunker was found to have a proper drainage system and inlets for fresh air and light.

WATER PIPES
As the bunker stored a huge stockpile of ammunition, it had a space built-in for water pipes to reach inside the
whole bunker so that in case of a fire, water could be released and the fire could be controlled.

VENTILATED
The bunker was also properly ventilated – a ten-foot huge ventilation duct was made so that sunlight and air
could pass through. It has several rooms which were used for storage purposes.
LIGHTING

TUBE LIGHT
They are installed in dedicated fixtures with built-in ballasts.
Circular and tubular fluorescent fixtures are often used for
ambient lighting in large indoor areas as their low
brightness creates less direct glare than incandescent
bulbs. Fluorescent lights are not without weaknesses.

FOOT LIGHT
Foot light is row of lights set at floor level at the front of a
stage, used to provide a part of the general illumination and
to soften the heavy shadows produced by overhead lighting.

TRACK LIGHT
Track lighting systems are versatile lighting solutions that
can be used to power spotlights, floodlights,
pendant lights or any other fixtures with the proper adapter
and voltage.
