Focus
This ESP course is designed to improve the English language
skills of non-native waiters in the catering industry, fostering
seamless communication with an international customer
base. Emphasis is placed on developing conversational
English and elevating customer service in an English-
speaking context.
Student Profile

The participants have a basic understanding of English and aspire


to refine their language skills for effective communication with
the guests. So they need to move from a basic level of
understanding to a B1 level of understanding and
communicating.

I would base the course on surveys and
interviews with current or prospective
waiters.

I found a dissertation on teaching ESP
specifically for waitstaff, so I would
draw inspiration from that as well,

The assessing of the language
level takes the form of a short
test where they have to solve
listening tasks. The topic of the
listening task will be something
related to waitressing. They will
also have to translate some basic
phrases to English. These terms
would also be terms used in their
work, such as: plate, cutlery,
napkin, glass, red wine, meat,
side dish, etc.

Final Project
The students will work in pairs, taking turns playing the role
of a waiter and a customer. The waiter will practice
greetings, recommending dishes, and handling special
requests, while the customer will inquire about the menu, ask
for recommendations, and possibly express dietary
preferences.
Final Project
After a set period, the pairs switch the roles,
allowing each student the opportunity to practice
as both the waiter and the customer.
If they have both been in both roles, they give
each other feedback, even in their own language.
