An eggshell is the hard outer covering of an egg.
The eggshell serves as a protective barrier for
the developing embryo inside the egg, shielding
it from external harm and providing a suitable
environment for its growth.

Introduction
Egg shells are mostly composed of calcium carbonate
plus some magnesium carbonate, calcium phosphate
and other organic matter, including protein. It offers a
rich source of calcium and contains trace elements like
magnesium and phosphorous. The estimated number
of eggshell wastes in the Philippines for 2019 is 63.28
thousand metric tons. Average eggshell thickness is
about 0.30 mm, thin shells are between 0.28 and 0.30
mm, medium shells are between 0.30 and 0.36 mm and
thick shells are between 0.39 and 0.41 mm.
Anatomy of an Egg
Shell
Cuticle- helps to seal the pores on the surface of the shell,
reducing moisture loss and preventing the entry of bacteria. The
cuticle also gives the eggshell a smooth and glossy appearance.

Shell - which is a thin, transparent layer that adheres to the


inner surface of the eggshell. It acts as an additional protective
barrier against bacteria and helps to contain the contents of the
egg.

Outer Shell Membrane- these membranes guard the


embryo from bacterial invasions and rapid moisture loss. It is the
one closest to the shell.

Inner Shell Membrane- which is in direct contact with


the egg white (albumen). It helps to prevent the loss of water and
protects the developing embryo from contamination. It is the one
closest to the yolk.
