Enchiladas Suisas

"This dish has a nice bite to it with lots of cheese. It is equally delicious with cooked pork
or beef."
INGREDIENTS
2 tablespoons butter
2/3 cup chopped Spanish onion
2 tablespoons all-purpose flour
1 1/2 cups chicken broth
1 cup chopped reen chile peppers
1 clo!e arlic" #inced
3/$ teaspoon salt
1 dash round cu#in

12 %& inch' corn tortillas
canola oil for fryin
1 cup shredded (onterey )ack cheese
1 cup shredded #ild *heddar cheese
2 cups shredded" cooked chicken breast #eat
1 cup hea!y crea#
1/$ cup chopped reen onion
1/2 cup sliced reen oli!es
1 pint cherry to#atoes
DIRECTIONS
1. +repare salsa !erde, (elt butter in saucepan o!er #ediu# heat. Saute the onion
until soft. Stir in the flour. -dd the broth" then add the chiles" arlic" salt" and
cu#in. Si##er about 1. #inutes to blend fla!ors" then set aside. +reheat o!en to

2. In a hea!y skillet" lihtly fry tortillas in shallow oil" bein careful not to #ake
the# too crisp to roll. *o#bine the cheeses and keep 1/2 cup aside for toppin.
2ip each tortilla in salsa !erde %both sides.' +lace 2 heapin tablespoons chicken
and about 2 tablespoons cheese down the center of each3 roll and place sea# side
down in a shallow dish.
3. -fter all the rolled tortillas are in the dish" spoon additional salsa !erde o!er the#
and then co!er e!enly with hea!y crea#. Sprinkle with re#ainin 1/2 cup cheese
#i4ture" and with the reen onions.
5ake unco!ered in preheated o!en for 2/ #inutes. Ser!e i##ediately" arnished with the
oli!es" cherry to#atoes" and with additional salsa on the side.
