meatballs and pasta (uk version - metric)

method
Meatballs are fantastic! Theyre perfect like this, with a one-minute homemade tomato sauce and
spaghetti, but you could also try polenta or simple chunks of fresh crust bread. I like to make
meatballs with a mixture of beef and pork, as I think it gies a really wonderful !aour and texture.
To make your meatballs
Pick the rosemary leaves of the woody stalks and fnely chop them
rap the crackers in a tea towel and smash up until fne! "reakin# up any "i# "its with your hands
$dd to a mi%in# "owl with the mustard! minced meat! chopped rosemary and ore#ano
&rack in the e## and add a #ood pinch of salt and pepper
ith clean hands scrunch and mi% up well
Divide into 4 lar#e "alls
ith wet hands! divide each "all into 6 and roll into little meat"alls ' you should end up with (4
Dri))le them with olive oil and *i##le them a"out so they all #et coated
Put them on a plate! cover and place in the frid#e until needed
To cook your pasta, meatballs and sauce
Pick the "asil leaves! keepin# any smaller ones to one side for later
Peel and fnely chop the onion and the #arlic
+inely slice the chilli
Put a lar#e pan of salted water on to "oil
,e%t! heat a lar#e fryin# pan on a medium heat and add ( lu#s of olive oil
$dd your onion to the fryin# pan and stir for around - minutes or until softened and li#htly #olden
.hen add your #arlic and chilli! and as soon as they start to #et some colour add the lar#e "asil
leaves
$dd the tomatoes and the "alsamic vine#ar
/rin# to the "oil and season to taste
0eanwhile! heat another lar#e fryin# pan and add a lu# of olive oil and your meat"alls
1tir them around and cook for 2'34 minutes until #olden 5check they6re cooked "y openin# one up

$dd the meat"alls to the sauce and simmer until the pasta is ready! then remove from the heat
$dd the pasta to the "oilin# water and cook accordin# to the packet instructions
To serve your meatballs
1avin# some of the cookin# water! drain the pasta in a colander
8eturn the pasta to the pan
1poon half the tomato sauce into the pasta! addin# a little splash of your reserved water to loosen
1erve on a lar#e platter! or in separate "owls! with the rest of the sauce and meat"alls on top
1prinkle over the small "asil leaves and some #rated Parmesan
