Hyderabadi Cuisine Luncheon at ITM Oshiwara

On June 24
th
, 2014, the culinary students of ITM Oshiwara had arranged for Hyderabadi
Cuisine Luncheon at ITM Oshiwara campus for Faculty of the college.

Faculty Chef Sujata Thapa, the counseller and lecturer for food production, initiated the
discussion with our culinary batch to prepare theme lunch based on Hyderabadi Cuisine.
Hyderabad is known for its cuisine as a confluence of Arab, Turkish, Mughlai, Andhra and
Marathwada cuisines, as the rulers of Hyderabad had predominantly been muslims.

The lunch spread as consisted of rich Hyderabadi cuisine served with hot Kulcha and;

Haleem Gil-e-Firdaus Mirch Ke Salan Baghara Baigan Zafrani Pulao





The dcor setup in the restaurant was replete with royal
embellishments of Mughal times like brass ensemble for
food service, Hukkah, Kaalin, Tabla.



Students dressed as Hyderabadi locals welcomed the guests to experience the rich culture and
tradition. Each guest was greeted with welcome drink made from rose flavor, a flower garland
and gulab jal being sprinkled on them. A pleasant
and mystique haze of Loban hung in the air to
take everyone to that Royal land called
"Hyderabad"



The Faculty enjoyed the meal experience
and provided feedback of students efforts in
the preparation of the food. They also
expressed their appreciation for the
authenticity of the cuisine
