COURSE DESCRIPTION
This course is designed for students who are interested in understanding the principles
of nutrition and in maintaining a healthy life style. Attention will be given to the selection
and preparation of food and personal health and well-being.

on time. All assignments can be
turned in for full points until the
start of the next time class is held.
Late work will be docked 50% the
first day it is late, and an additional
5% each day it is not turned in.

CLASS OBJECTIVES
As a class we will:
Apply the skills of kitchen equipment and management
Demonstrate kitchen safety procedures and sanitation techniques
Explore the current dietary guidelines and choosemyplate.gov
Identify the sources and function of carbohydrates and fiber and apply appropriate food
preparation techniques
Identify the sources and functions of proteins and fats and apply appropriate food
preparation techniques
Identify the sources, function of vitamins, minerals and water and apply appropriate
food preparation techniques
