Ingredients

1 cup dry macaroni noodles


1 tsp. salt
cup milk
2 tbsp. margarine
2 tbsp. flour
1 cup grated cheddar cheese
cup breadcrumbs
dash of pepper (optional)

Directions
STEP A Cooking Macaroni Noodles
*Preheat oven to 375oF on middle rack position*
1. In a large sauce pan (pot), heat pot of water (on high) until it comes to
a boil (bubbles on the outside edge of the pot).
2. Once the water has come to a boil, carefully add noodles. Stir with
wooden spoon.
3. Reduce heat to medium and cook macaroni until tender (approx. 10
minutes), continuously stirring.
4. Drain noodles in colander over the sink (BE CAREFUL!). Return noodles to
empty pot and set aside (not on the burner).
STEP B Making of Roux (White Sauce) for Macaroni and Cheese
1. In a frying pan, melt 2 tbsp. margarine on medium heat; stir with whisk
until it melts.
2. Add 2 tbsp. flour and whisk until all flour has been absorbed by
margarine.
3. Immediately (but slowly) add cup of milk and 1 tsp. salt to roux.
4. Using whisk, stir mixture for approximately 5 minutes until thickened and
smooth.
5. Save cup cheese and add the rest to sauce mixture, stir until it has
melted into the sauce.
6. Add drained cooked macaroni noodles to sauce. Stir until noodles are
covered in sauce. Sprinkle a dash of pepper to the mixture.

7. Spoon into a greased (margarine) mini-muffin


pan. Add remainder of grated cheese to top of
macaroni and cheese. Add a small amount of
breadcrumbs to finish.
8. Bake approximately 10-12 minutes in preheated oven until golden brown.
9. Let cool for 5 minutes, use a fork to help
remove bites from the muffin pan.
