Peanut Sauce for Satay

Ingredient: Peanut 500 g


Red Chili, deseeded & cut 1
Garlic 1 small clove
Shallots 5
Sugar to taste
Salt to taste
Sweet Black Sauce
Chicken Broth + a cup
Peanut Oil

Process: 1. Heat the peanut oil & fry the peanut till golden. Put them aside to cool.
2. Put the fried peanut in a blender together with the red chili, garlic &
shallots, sugar & salt. Blend until smooth, adding a little chicken broth to thin the paste a
little for easier blending.
3. Heat a little peanut oil & fry the paste in low fire until fragrant. Add a little
oil & broth as needed until the consistency of the paste is desired.
4. Add a little sweet black sauce for coloring.

Note: Use a little of the sauce & the oil from the peanut sauce mixed with some
sweet black sauce to marinate the satay before grilling. Half way during grilling baste the
satay again with the sauce.
