A white, salty crystalline powder, Sodium Bicarbonate is a versatile ingredient into a wide array of
industries and applications. Other names for this product include sodium hydrogen carbonate, baking
soda and bicarbonate or soda.

Its most prevalent application is within the food industry. Whether it is being used as a leavening agent or
a processing aid, Bicarbonate can be applied to a range of foodstuffs. Its leavening properties are a core
component in baked goods, and are traditionally aided with a food acid such as cream of tartar and a
broad array of phosphates. It can however leaven on its own through heat alone, but then the bitterness
of the bicarbonate can affect the final product’s taste, appearance and texture. Additionally, it is used ass
an aid to break down vegetables within a number of products. The most common is the use of sodium
bicarbonate in breaking down peas to make the British-Style Mushy peas.

Pharmaceutical and Personal care companies use it for a range of treatments and cleaning agents. As a
primary component, sodium bicarbonate is a suitable antacid when dissolved in water. Doctors also use
bicarbonate solutions for treatment of high body pH (Acidosis). Beyond this mouthwashes and
toothpastes use it as a whitening agent, plaque remover, antiseptic and a neutraliser with regularity.
Finally, industrial businesses use baking soda as a pH adjustment aid, disinfectant, fungicide and odour
absorber. As a result it is a popular choice in a range of applications from being an additive in pools, spas
and ponds through to book restoration.
